I can tell they're a honest people cooking honest tasty noodles of all kinds. Wish I'm there right now slurping curry noodles. I live in northern California and there's not even one good Japanese restaurant around. Most Japanese eateries are owned by other Asians and they cannot cook Japanese dishes. It wasn't this way when Japantown opened back in early 1970's in San Francisco.

I have watched several of these udon or soba noodle restaurant videos now. Although there are sushi and hibachi restaurants nearby, I wish there were also some of these noodle restaurants where I live in the US.

2:20 he chose to be an apprentice at 17, 2:33 he became independent owner at 30 years old.
