- Let's make a staple Moroccan dish: Djaja Mhammer, chicken with olives and preserved lemons, often served during Moroccan weddings!

INGREDIENTS:
1 whole chicken (medium size)
1 large onion
3-4 garlic cloves
1 preserved lemon (large size)
2 tablespoons olive oil
4 tablespoons vegetable oil
Large pinch saffron threads (optional)
2 teaspoons ground ginger
1/2 teaspoon ground turmeric
1/4 teaspoon ground black pepper
A small bouquet of fresh cilantro
1 preserve lemons
15 green olives
A little bit of butter
Water (2 cups)

Alia, I just made this chicken dish this evening for a moroccan friend and we were both floored by how delicious it was! The flavors were so complex even though the preparation was so easy! oh that's awesome!!! you can also buy preserved lemons from amazon.com but it's much cheaper and tastier when you make them yourself!

cookingwithalia I have a suggestion for side dishes, I once had egg dipped /coated cauliflower which was to die for, also carrot zaalouk. A wholewheat khubz recipe would be good to know. There is also a dessert which is a mound of sweet couscous served with boiled eggs, that concept was interesting. What about a typical 'Friday' tajine? Egg based dishes, sandwiches/snacks, any soups not yet done. That list should keep you occupied for a while, but you did ask lol.

P.S. Where I live it is hard to find green olives. Would kalamata olives be OK?

Hi Alia! I don’t have preserved lemons right now. However, I do have a preserved lemon paste. How much should I use?
If we don't have preserved lemons, what should we do? I just looked up what it was, and I saw that we have to "marinate" them for a month in their own juice! Well, I don't want to wait a whole month before making this delicious dish. So any suggestions? Thanks Alia, your recipes are amazing!
Yaske01 You can use the pulp of 1/2 a lemon and you probably have to add salt to the sauce. the chicken will still be very tasty - but preserved lemons is what makes it unique. check out my recipe on how to make it: th-cam.com/video/ApblfnsB5pE/w-d-xo.html

hello alia, after watching your recipe several months ago, I bought a bottle of preserved lemon but never tried your recipe. Just noticed that the bottle has the best before date of March 2016. It's never opened. Can I still use it? looks fine to me

That is an amazing dish. Just one thing, if that knife of yours is a ceramic blade knife, then do not use it to crush garlic like the you were doing in the video. If the hand hits the knife's side at an awkward angle then it may crack.

It would be better if you:
- Mix the sauce with the chicken and out it in the fridge for about an hour or the hole night if possible
- for olives you can also boil them first and then mix them with the conserved lemons and the sauce so that the sauce will not be very acide ...
The morrocan chicken with conserved ghe lemon is one of my favorite dishes ...
But in your point of view what kind of salade or entry may i propose with thi chicken when i receive guests ??

What's a preserved lemon ? Just freeze lemon or its in vinegar like pickle ? Can we make or buy from middle eastern shops ? Thanks
+samina khurram just put the lemons inside water with a lot of salt and close the bottle very well. leave them inside it for about a month or more and if you want it before that you can just add soda to the water and salt.
