Just curious, do you think it could be good to enclose the ribs in foil to speed up the process? I know Sam the cooking guy does 275 for 3:30 with his beef back ribs, which are obviously very different.

Chef you've done it again. Those beef ribs are cooked to perfection. I do this with pork ribs. I'll have to pass on the hog maws as I remember my mom (RIP) adding them to stretch the chitlings which I also pass on lol. Another great recipe. Thabks for sharing.
Sir can you smoke a brisket in a oven in doors, I'm 72and can't find any one to smoke 2 or 3 . . for me..I would really like to know and my information is from a wonderful person cook. .

Yes you can. cook it just like the beef ribs 225 deg till you hit 205 deg on the temp
So the desert I will bring this time will be peach cobbler. Can't wait to make these ribs.
