We make something similar. In spanish its called carnitas. I remember my dad frying carnitas in a big copper pot. We would serve them with beans, Mexican rice, warm tortillas and salsa. So delicious! I also am going to out your video on the beans and sausage. Thanks!👍😊

Another excellent episode! I have a question that I've been holding out on asking you. Why do you put oil on the meat after seasoning? I always thought that the oil should go first, then you season it because it'll stick to the meat due to the oil being there. When you put the oil after, I always thought that it would move the seasoning off of the meat, like rubbing it off. You know more than me so I'm curious on the reason.
The oil will repel the seasoning not letting it all soak in and flavor the meat down to the bone. Hope this helps and thank you for watching my friend.
This is my first seeing this type of pork fried. Other pork has been fried with flour like chicken, then smothered. Something that I have come to note in my cooking is that I do not use enough seasoning. Some of my seasoning has salt. Controlling the sodium limites the other contents. Therefore, I will be making my own. Thank you for your seasoning comments, and it really is helpful. I love your bean dish also. I will try both soon.
