I've always used White Lily Self Rising Cornmeal, sometimes I use Martha White. I always follow the directions on the back of the bag of cornmeal to make mine. Thing is, I don't have a cast iron skillet. I use a round 9 inch pan with a liberal amount of canola oil cooking spray. It always comes out looking so good and perfect. It is a little thick, but that's how I've always eaten cornbread growing up.
I had the job of making biscuits and cornbread growing up--Daddy wanted flat biscuits and cornbread without sugar. I had to make them and eat them like that then, but now I make fluffy biscuits and sweet cornbread! That's the way I like them (& my husband does, too).

My Mom was born and raised in Virginia and she liked to crumble corn bread into a bowl and pour buttermilk over it. Spent time on grandparents farm. Home made everything on a wood burning stove. No electricity,no indoor plumbing. This was many years ago. I am 84.Be safe,healthy and happy. 😇

I want cornbread, not cake!! But I guess we all like it the way our mommas and grandmas made it, and sugar was never a part of cornbread. I make cornbread all the time in my mama's cast iron Griswold frying pan she got as a wedding present in 1951. Just use the recipe on the back of the corn meal and I like Tenda-Bake White Corn Meal Mix and don't add salt or sugar. We have it with pinto beans or chili beans. I've heard the word "pone" as in corn pone, but never knew it meant a pan of cornbread until recently.
We love cornbread too but I make it like my mama did and she didn’t put an egg in it, but she did put a little sugar in it and we do use buttermilk. Love to hear the sizzle when we pour it in because we love that crunchy crust too. You all are a sweet couple. 😊♥️

I like that square skillet. I use MW cornbread mix all the time and it’s better with buttermilk, IMO. Then you can use leftover buttermilk for a buttermilk pie! 😂
I’m in Louisiana and everyone I know puts sugar in cornbread if u eat it with a meal. Cornbread for a cornbread dressing is without sugar. My husband is frm Mich. and when I made cornbread there they called it Jonny cake. It’s all good however you make it. I also put the same amount of flour as cornmeal. It’s how my grand mother and mama made it.
I use more fat and I use shortening and bacon fat. And no sugar at all. I use a 1:2 self rise flour to self rise cornmeal. I pour mine on the stove so it fries like that’s and gets a real crispy crust, but It is thicker and steamy and fluffy inside so It bakes for 30-40 mins.
My father-in-law always made the best cornbread! His would be kinda runny and he would put a pinch of baking soda in his. He tried teaching me but it never tasted like his. I could make a meal with his cornbread and a glass of iced tea!

My Southern cornbread uses YELLOW cornmeal - true southern - no sugar. That's how we do it in Texas.
