I make a lot of cookies and what I do is bake what I want and then ball up the left over dough into the size cookie you want and put them on a cookie sheet. I then put them in the freezer until they are firm. Then I put them in a freezer bag and label it and stick it back in the freezer until the next time we want cookies. You can just pop them in the oven frozen or let them thaw a little. Add extra time in the oven if they are frozen.

I love these cookies--the Original Benjamin's Calabash Seafood restaurant in Myrtle Beach, SC serves them on their dessert bar. It may not be Laura Bush's recipe, but they are Cowboy Cookies. Personally, I leave out the cinnamon. They're like a deluxe chocolate chip cookie with all your favorite add-ins. I do love coconut and pecans.

You probably can, but I would freeze the dough in smaller portions in a zip top freezer bag. Flatten it out so it will thaw quickly and then bake them fresh when you want them. That is a lot of cookies! The recipe could be halved or divided by 3 easily if you want to make less.
I made a half batch and they are delish! After all ingredients are added they mix up very nicely using the bread hook on your Kitchen aid.
