Thank you so much for the Rice-A-Roni knock off instructions. We can’t use the boxed mix since my husband is on a low sodium eating plan. With this I can control the salt content and tailor it to fit our needs. 😊
I rolled out pasta for years before I got my kitchenaid pasta roller and cutter. I also made bread by hand, kneading manually before I got my kitchenaid. I tell you, it really makes you appreciate the tools when you get them.
Ditch the elbow grease and just make drop dumplings. Same dough spooned into hot liquid (water, broth) to cook. No kneading or rolling or cutting and they’re great.
I just cooked a turkey breast from frozen yesterday in a similar manner. I used frozen Reames noodles. However, after I pulled the turkey from the pan, I used the liquid to cook a pound of dried white beans. It is nice to reduce the noodle and meat quantity by bulking up the meal with beans.
I love making a whole chicken in the instant pot! Once I realized how easy it was anytime I see whole chickens on sale I buy them ☺️. I did film it at one point on my channel and showed how to make homemade chicken broth and other meals from the whole chicken so you don’t waste anything!
YUM! I live this channel ❤ we’re a low income disabled family of 3 I can’t tell you how much your videos have helped our family get out of a budget meal funk! Thanks Ms Mindy 🤗
Mindy, years ago my Mom made a lot of the homemade noodles for an annual church chicken and noodle supper. There would be noodles “drying” all over the house. Great memory for me now. Thank you for the video, I love cooking from scratch!
My Mom used to make egg noodles! They were so good. My children and husband preferred home made chicken and dumplings instead so I learned to make dumplings. I made a beef stew with dumplings that was so good, also.
You should purchase a Apple, Peeler, Corer. They are WONDERFUL. I love mine. It was bout 20.00 in Ontario Canada 🇨🇦. It really cores, peels and slices at all once.
I've enjoyed cooking since I was in second grade, and mostly cook everything from scratch. We rarely go out to eat for several reasons. But - never have I ever tried to make pasta because it just doesn't see worth the extra effort. Bless your heart for taking that extra time/effort for your family!
If you really enjoy noodles and other homemade doughs like cinnamon rolls etc-get a marble rolling pin! My landlord has one and I borrow it frequently and have told my husband I want one for my birthday ( we live in the basement apartment and I’ve known her for almost 39 years because she’s one of my best friends mom😂) it makes rolling out doughs so much easier!!
I absolutely love when you share different recipes from roast chicken. They are so versatile and can be adapted to fit many meal plans🌻 I love the way you made your chicken stock in the slow cooker 🤓 so much easier than simmering on the stove. Thank you so much and I hope you enjoyed your vacation ☀️
Love the technique and recipe with the whole chicken in the crockpot. I have 2 in the freezer I need to do something with so I'm going to try this. Same with the rice instead of boxed. We don't eat much salt so anything I can make from scratch is great for us.
I love scratch cooking. I've never seen a apple crisp made like that but I have some granny Smith apples I would like to use up and it seems like this was perfect timing 💙
I am so happy to see someone not using "cream of" canned soup in their recipes. I have never purchased canned cream soup ( 70 years old) & I find making your own is simple and cheap. BTW love your channel and watch all episodes.
My mom was half napping while I was watching your videos. She kept waking up, thinking I was talking to her. She said that we sound a lot alike and have similar speech patterns. I thought that was kind of neat. 😊
I hate peeling apples (and potatoes) so I try with all of my might to make recipes that don't require I peel those two things. I made my own apple crisp the other day and my recipe is almost exactly like yours. I used an old fashioned potato masher to cut the butter in with the flour and sugar. It worked great!
Watching my grandmother make noodles and rolls was like watching a great artist create. She had a very light touch that I believe was the key to how good they were. I’ve tried and I’m just too heavy handed. Noodles are always tough and my tolls never rise. 😂
My hack for the DIY Rice-A-Roni mix is to use orzo and rice. It saves me the step of breaking up the spaghetti and has the bonus of all of the pieces being the same size :-)
New to your channel, I really love your channel so far, it's so relatable and down to earth. Enjoyed your quick, no fuss recipes, and surprisingly, your demeanor, you have an enjoyable down to earth presence that is nice to watch. Thank you.
Every time I make a fruit crisp, I laugh at myself. Because I too like ice cream with them. And I think, so the crisp was super rich and my solution to that is to add ice cream. 🤣🤣
these recipes all look amazing. I want to make them all! Thank you so much for the great ideas. I will be trying them out. I enjoy cooking from scratch. it is time consuming though. it is worth it. can't do it everyday though.
My children grew up on these noodles the other day my 49 year old son reminded me he would certainly love them again when visiting. You need some chicken fat in your broth and makes them richer and better. At 82 not too anxious to roll them out think the dough could be made in the food processor until it comes to a ball.
I love scratch cooking. But I can't eat alone of it so give to my daughter and son-in-law and my son and his 2 roommates. They all loved the homemade stuff.
That casserole recipe looks SO yummy! I try To make most of our meals homemade. Then I can control the ingredients. If it’s a busy week, I do grab for canned or boxed meals sometimes.
Hi, Mindy! Is there an index of your recipes anywhere, such that I could look up one in particular (with its respective video(s) linked), so I don't have to search each and every video? That would be so helpful! Many thanks.
You are inspiring me to cook a chicken in a crock pot! Do you think a 4.5 quart pot would be big enough? I am only cooking for 2-3 people at a time and am looking at sizes. 6 quarts is more than I really need. Thx Mindy!
I intentionally cook more chicken than I will need at one time to freeze for additional meals. That way you are only doing the work once, but have options for quick meals another night.
I saw a binging with babish episode where he made the egg pasta in a food processor and it was so fast. I haven’t tried it yet but it looked great. He has a pasta roller attachment for the kitchenaid though, that’s a game changer
Excellent video 😀 I hope lots of people see that cooking from scratch is really simple and doesn’t take very much more time. Even the rolling out of noodles can be time we’ll spent if you double or triple the batch and freeze some for later. (Anyone who hasn’t had homemade noodles should at least try Reames, the difference is amazing) Even if making noodles or cream sauce from scratch isn’t something you’ll want to do regularly it’s a good skill to have in your pocket. Roasting or slow cooking a whole chicken can be very frugal especially when you also make broth. Butchering a whole bird is almost a lost art
Ha! Your mom’s Apple Crisp is … an Apple Crumble. I mean, the textbook definition of the Apple Crumble (and I too agree that Apple Crumble > Apple Crisp)
Good afternoon Mindy Mom. That all looks delicious. I believe my favorite is the chicken with the homemade noodles - definitely better and more frugal than store bought noodles. TYFS and have a good Monday. 😊😊
I had never had it with mashed potatoes either growing up. First time I made beef and noodles after we got married hubs wanted to know where the mashed potatoes were and I thought he was nuts
Funny but not funny…. A week ago I tried to break up a chicken quarter that had the back bone still too, and I had to just bake it as it was bc I was about to pass out. Just yesterday I thawed the other two and basically mutilated them 😂 without getting too queezy… cooking a whole chicken AND THEN picking it apart sounds like a much better idea, also maybe I’d be able to eat it when dinner is complete 😂
Growing up in poverty, we butchered tons of chickens and made tons of homemade egg noodles. Now we don't eat those items...just sick and tired of them.
We went through a few years where our rent (which was cheap for where we lived) took up almost 60% of our income. Cooking chicken like this and using the bones and broth and then shredding the chicken made my food stretch SO much further.
Wow! That must have been challenging, glad you found a way! I feel like a little scratch cooking is just a good skill to have, and sometimes it comes in handy in various seasons of our lives. :)

It's part art, part skill, I'm convinced. :) The noodles still challenge me sometimes.
My Mom used to make egg noodles! They were so good. My children and husband preferred home made chicken and dumplings instead so I learned to make dumplings. I made a beef stew with dumplings that was so good, also.

Apple crisp is the best. My mom never put oats in her apple crisp and her topping was always crunchy. So for us this was traditional apple crisp.
