    I wanted to get into cooking last year and didn’t have much of a pantry. After Xmas I took 25$ I got for a gift and went to dollar general on a Saturday so I could utilize their 5$ off 25$ coupon. Most their seasonings are 1$ too. I got all the basics and also some more fancier ones-cumin, dill weed, etc. got out there at 21$ and it wa so game changer. Being able to watch receipts and learn and have the spices you need. And also ramp up cheap, budget cooking to something super tasty

      Agreed, Nicky! Plus, once you stock your spice cabinet, you probably won’t have to buy them all at the same time again. It’s just about replenishing what we run out of from time to time. 😊

      Next time if you have an Aldi or Kroger around you their spices are usually less than a dollar, if you get the store brand. (At least in the Midwest it’s this way)

      I watched a $5 casserole meal on another person vlog this week... she was at 6.50 each leaving the store(ok I'll let that slide) but then came home and added cheeses, and bacon, and brown sugar, and butter etc etc etc... no no no! Salt, pepper oil(butter) maybe, marginal flour...garlic or onion powder... sure... but all these costly things plus obscure spices... nah dawg... that's click bait... I'm gonna stick with my mindy! She's 100% reasonable! Lol

    Mindy, your videos should be shown in public schools so that kids learn how to cook with real, inexpensive, and healthy food. So many people do not have a clue how to even cook a pot of soup. I am a big fan--thanks for all you do to educate people.

      I just accidentally found you . I have learned more from you in the last 2 evenings then I do on the cooking channels. I just had major surgery so standing will be out for a few weeks. But I am making up meal plans with what I have in my freezer that my husband has been mind listly filling while he fills the grocery cart with food we aren't eating. I can't eat . He eats on the run . So we will be needing to paying down the credit card and saving money by saving with groceries.
      So I Thank you.

      Is home economics even offered in schools today? I know when I was in school back in the 80s we had it. My kids didn't and that was the early 2000s. They had economics but it was a general course. It was more about just money and learning how to ledger a budget. I would teach a home economics class for free if my local middle or high school would let me.

Gotta keep the masses dumb you know. *eye roll* I wonder if you could get with a community group to offer stuff like that. It's needed.

    I wouldn’t worry about what others think of a little seasoning added. Some people just complain about everything. Most of us moms understand where you are coming from. You do a great job and I love watching your videos!

      I agree don't worry about the little seasonings. When shopping on a budget people have hard times especially getting the seasoning. That's a reason I like to keep onions garlic and ginger (when I can afford it) on hand

    Mindy. I have watched this video over a dozen times on my relax Playlist. But something about the way you said " it's ok, it's just food" hit me like a ton of bricks today. How many times in life do we as women, mom's, daughters, wives hold ourselves to these CRAZY standard? When maybe the mantra should be- it's ok, it's just ****. Thank you for being here for all of us. I'm going to pray on it today and I hope it stays with me during this season of my life.

      I did this at Christmas the year my daughter was moving out on her own. Along with spices, I included condiments and things like cling wrap & foil. She loved it.

      When I got married in 97' my friend's mom had a hip hugger laundry basket w salt and pepper shakers, spoons, spatula, flour, sugar, maybe mitts or towels. I can't remember. I try to do something similar if someone is just setting up their household.

    When I started out some 35 years ago, I only had salt, pepper, garlic powder, ketchup, mustard, Worcestershire sauce, and soy sauce. As I stated learning more I had oregano, basil, thyme, onions, carrots, potatoes. As I started learning to cook and bake more I also started learning how to actually shop. I had a $50 grocery budget for everything household including our cats and eventually a total of 6 people. We didn't have TH-cam or Pinterest but we had libraries and talk shows. I like your basic budget videos and so many can learn how to do this budget cooking thing and have healthy, nutritious meals.

    If a recipe calls for sauteing veggies and you don't have any oil, you can use a small amount of broth or water in place of the oil! It's admittedly not quite as tasty, but it definitely works in a pinch. I've done this before when I SWORE I had more butter somewhere but was totally out.

      I also save chicken skin when I use boneless/skinless, etc. It renders fine and gives great chicken flavor. And yes, make broth with the bones and skin.

      I thought the same at first until I remembered when I was in a new state, away from family, having just moved into a new place, and I had *nothing* yet, with almost negative income lol. Not everyone has an 'established' kitchen so I understand a little frustration with this (but yes, most people do have a lot of these common items).

    Walmart sells basic seasonings, like garlic powder, onion powder, chili powder, Italian seasoning as well as a few others for about $1 a jar. Add one jar to your shopping cart each time your shop and before long you have your staples and it didn't break your budget. Also watch sales ads. Some stores will put dried herbs and spices on sale around holidays. Another way to add to your pantry staples.

Your videos give viewers ideas as to what you can do to keep your meals budget friendly. Everyone's area is different.     I totally agree with you on using pantry staples outside of the 'budget' for a week's worth of meals. After all, anyone watching this type of video/post likely a) has a kitchen; b) has had that kitchen for a significant amount of time; c) has been feeding their family for some time. It's just silly to insist that every little spice/oil/flour must be included in the budget. That would take some ridiculously mind-numbing time to calculate all that out. Sure, eventually spices/bouillion/flour/sugar will run out, but in the meantime, who wants to divide a $1 bottle of Italian seasoning by the teaspoon???

    I made those flavored saltines from your video and they are a big hit. Everyone loves them.
    It is totally not cheating to use pantry staples in a recipe. If you bought every little thing, you would have so much excess that it would be silly. I understand the people just starting out, but spices can be bought for so inexpensively.

      A lot of stores have a few spices/herbs for $1. Meijer, Kroger, Christmas Tree Shoppe where I'm at.

    I dont understand people who nitpick the cost. We're not all going to be able to find the exact costs you get at your Walmart either and that's OK. It's the idea and showing how to shop and put different inexpensive ingredients we find together to feed our family. Thank you Mindy!!

    I think dollar tree (or 1.25 tree now 😄) is a great place to start getting your basic spice collection going. They might not be top quality but good enough to get you going and then when it’s time to replenish you’ll know which ones you like/use the most & that are worth spending more money on.

    You got me doing pantry meals. I started last week. On my 5th day. I gotta ho to store tomorrow for xmas dinner. If it wasn't xmas I probably would do pantry meals a few more days. My husband loves the idea cause we are saving money.

    I love all your videos and recipes! I just wanted to offer a word of warning about using glass baking dishes under the broiler. Both Pyrex and Anchor Hocking warn that their dishes should not be used under the broiler, as they can break or shatter.

    I’ve been trying not to throw away any leftovers or food in my house. Your videos have been helping me so much. From the shopping hacks to turning leftovers into a different meal for another night. It’s great. In the past two weeks I can already see a decrease in my food budget and it’s amazing.       Cottage cheese, eggs, lentils, beans, nuts, nut butter and tofu are all awesome proteins…budget cooking is much easier, in my experience, without meat 😀.
      For creamy soup try white beans in place of chicken. For veg broth, you can use old veg scraps and make broth from that or use a veg bouillon cube.
      For the tacos you can substitute black beans for the chicken.
      For the easy pasta, you could just leave out the chicken.
      To me, those are pretty easy vegetarian adjustments🤷‍♀️.

    Omg, these meals are just perfect for me this coming week after Christmas Mindy. Believe it or not my health has taken a turn for the better. I really don’t know what it is but since I moved from Miami, Florida to Ocala, Florida and I found your channel just following the meals doing budget it’s been an amazing year. I had my yearly health check up to check my lupus and it’s in remission, I am still on blood thinners but that’s ok I know that’s for life any ways. I was just surprised my youngest daughter is having another baby so I am going to be a grandmother for the fourth time very happy. Oh boy so many blessing. I am sorry just rambling.     I also use the same base ingredients across a range of meals. I'll prepare several dishes, portion them, and freeze them. I buy meat in bulk when it's on Manager's Special or a loss-leader sake. My local greengrocer has a special bin for produce like cauliflower with brown splotches trimmed off, or tomatoes that are just off perfect firmness, or apples with small bruises. I buy these, prepare them the same day, and freeze them. Last week I paid 99 cents for onions that would have cost $6 at normal prices. It's chopped and frozen, ready for use. I also make foods like pindjur and chutney from imperfect produce.

    I totally agree with your advice of using ingredients across many different meals. I'm also a reduced-price-meat shopper. I just bought chicken breast on clearance at Target today, so I'm making Chicken Cacciatore in the CrockPot for dinner tonight & tomorrow. =)

    Can't wait to make that last dish, the cheesy chicken and rice bake! One suggestion for starting to build your pantry staples, especially spices is the Dollar Tree. That's pretty much where I get all of our spices now and they are maybe a quarter price or less than the grocery store. Aldi's has inexpensive staples and spices too. I feel like you could spend an extra 3 to 5 dollars a week and quickly built up. Thanks for all you do! 🎅🤶💖🎄

    I love your videos. I’ve been doing a December no spend month we had tons of stuff in freezer and pantry so been using only that stuff which is nice to use what we have. I only spend 15$ a week on produce because I can’t live without my salads 😂 have saved so much this month thanks for the great videos

    Definitely trying these recipes. One of my family favorites inspired by you is shrimp boil in the crock pot 😋 and turkey cheesy pasta.

      My son still asks for shrimp boil all the time! We discovered last year I have an allergy there, so I don't do a lot of shrimp any more. :(

    Thanks for the ideas.
    I actually bought some things from the grocery store this morning to make broccoli/cauliflower casserole and a cabbage casserole sometime in the next week,+ a couple cans of rolls/biscuits.
    I really like veggies and am trying to eat them more. My son & his dad however not fans of much. I’m just going to add veggies separately to mine that I know they won’t eat,like zucchini.

    Funny you had chicken tacos...We did too. I had bought two rotisserie chickens($4.50 ea=9.00) My Mother is getting over her cold for a month. I made chicken soup. I broke down one hen for the soup. After two days of that soup, I grabbed the chicken shreds from the pot. I place in the taco shells. **What is nice most corn tortillas are Gluten Free!**
    That is a big reason I love your channel. Inventive, problem solver, budgeter, etc. You have helped a lot of people to cook and think about what they are cooking! I believe people haven't experienced a lot of home cooking. (I know in college a lot friends did not know how to prepare a can of condensed soup or grilled cheese sandwich!) Ohhn...Yes!

    Hi Mindy.. fantastic meals!!! I make the chicken that use in tacos but I add my corn and black beans with the chicken when cooking in the crockpot, we put ours on tacos chip's. I will try your meals for sure. Yummy!!!

    If you need to firm up limp celery or carrots, just stick them in a cup of water for a little while and they absorb the water and firm up. Yes everybody has something in their fridge or pantry. Those who say otherwise are being ridiculous

    I have always been one of those Cooks that I look in my pantry I look in my refrigerator and I create from there.
    I always have the basics around I think it's so expensive to run out and buy a product. How I plan my meals as I also look at my supermarket ads and of course by most of the stuff on the front cover 😊 I certainly will be trying those recipes they look simple but delicious

    Excellent video! Ignore the negative people 😂 some people pick apart everything because they’re unhappy and it’s leaking out of them… I’m definitely trying these recipes I’ve just had a reduction in income and massive medical bills to pay off and have to figure out how to cut the few areas I can and groceries is definitely an area with the most flexibility… Thank you for helping us with our budgets!     Heck, i even ask for extra sauces and spices on the side in the packets. So lets say im strapped or i forget to buy something ill have tacobell sauce, ketchup, mustard, mayo, salt pepper, soy sauce, parm, red pepper etc.
