So true, you need a drum smoker (hot and fast method), pellet smoker (poultry), stick burner (primary smoker or the drum), a Weber kettle/PK Grill/Gas Grill w/wood chip box for steaks. I have 4 currently and I’m looking to make it five but dwindle down to 4 again. The black stone is nice but frankly you can do that with a cast iron skillet. My big thing I’m struggling with is portability of these. I love what Outlaw and Jambo are doing building carts but someone needs to come up with a way to take these things on the road without a truck or trailer. I’ve been kicking around an idea in my head of a contraption that would stack on top of the common park style grills you see everywhere that could be a vertical smoker that folds and collapses down flat. It would smell a bit in transportation but a carrying case could be devised to zip it up. Making a smaller drum, stick burner, or pellet smoker isn’t the answer because smaller usually equals radical temperature swings quickly because of a lack of controlled airspace but something’s that folds flat and builds tall and takes advantage of existing infrastructure could allow you to take BBQ to places you never dreamed of without a motor home, trailer, or truck so long as you can find a park style fixed grill.
Me to my husband “I found something else I need outside to cook on” Husband- “What?!?!” Me- “ A Santa Maria grill, Malcom says I need one!” Husband- “Malcom is the Devil!!” ( I have 3 stick burners, a Weber, a Blackstone and a fryer) Malcom can you hook me up with one of those Santa Maria grills for research purposes? 😁

I just went with a weber kettle and a griddle top and a santa maria attachment for it. And of course a smoker as well.
The silence when he said “you can do sides” had me dying laughing
