Burley tip for gar fish for you. Bread crumbs, tuna oil, a little paprika, hand full of beach sand and enough beach water to mix it all to have it compressible into a ball but loose enough to break apart. Gars will go bonkers.
Bravo brate, haven't targetted these guys in years but remember being taught to do a slow wind in and your hookup ratio will increase rather than waiting for the float to go down. Give it a go :)

Brother I do the exact same thing, sometimes I jerk the float to grab their attention and it works a treat.

Some old fellah told me you can't catch mullet on a hook (they just dont get hooked he reckons) but it seems he was wrong.
Show him this and you definitely can hook mullet up
Deffs can brother used to slap coorong yellow eye mullet (they are quiet small great eating tho) every winter used to catch a dinner almost everytime

They're thick in most estuaries, you just need to burley to get them close
