Since you specifically mentioned waiting for the right board to come along I thought I might share my experience "in the hobby". I've been following this hobby relatively closely for over three years now and I've purchased exactly one keyboard, not even a custom. I'm only now convinced that I've found the right custom for me and I'm still waiting for it to be released. There have been *many* that have been close, but I now know for a fact that had I bought them and then the board I'm waiting for now was released I would sell the others in a heartbeat. Figure out your preferences and buy the right board. Think about your current board and find things that you like and don't like. Just because yours isn't custom doesn't make it inherently worse, there are bound to be things you like about it. You also might be wrong. Don't only buy the plate material that you think you're most likely to enjoy, grab one or two others to play around with. It will be much cheaper than buying two or three boards just to find out if you like aluminum more than FR4 or vice versa.
I've really been enjoying this series of keyboard community-centric conversations.

It doesn't need to be a big meetup, there are likely a few keyboard enjoyers in your immediate area. Start connecting with them!

Hard to say, as the 5 change all the time, but I would always keep the following:
My jane2
A nice topre (maybe 86u)
A nice vint (likely my SSK)
A board with a numpad (cypher probably)
And a "fun" to type on board (like angle, F1, Jaguar)

Hey Simon, I was wondering if you recommend some other content creators in the space who are knowledgeable, and have good mind sets about these things in the same way you do, and aren't just here to shill whatever hype new thing. I'm relatively new to this, and after watching a bunch of your videos and stream vods, I've decided I want to take care to steer myself down the right path in this hobby, if I'm going to be sticking around.
There's lots of solid people, I don't want to list anyone in particular because I may omit some others that deserve to be on the list but: the most important bit is to get multiple points of view, always.
Look at smaller reviews from actual owners, not content creators that shed light on how using the board actually is.
Alongside this, look at larger creators, though they may sugar coat things, they'll often give some criticism (briefly and lightly), pay close attention to those.
And tune into the streams for sure ;)
Sage advice
Been in this hobby for three years now. I've gotten a lot of my core friendship group into the hobby, they all have custom keyboards now and we talk and it's been super rewarding.
But I honestly dont understand how you could realistically go from talking about keyboards in a discord server in a public forum to like seeing that person in real life and going out to dinner. Is this a common occurance?
Start with a meetup and go from there, you can hang out with people and talk about keyboard stuff there, and if you get along with anyone in particular you can continue it elsewhere after meetup hours
