Yay...I missed you...while waiting for you, made monkey bread and the sourdough sandwich bread...they all came out perfect. I was raised in Puerto Rico and this is the kind of bread we ate (Pan Sobao) every morning with lots of butter...delicious😊

Kara, I have a question. What is the proper % of hydration when working with FMF. I have been baking for many years always with commercial flours. Now is a different ball game. I know flour is always 100% but if I use 60% of water, wouldn't be dry dough?
That question is a little more difficult to answer with fresh milled flour, because it depends on the recipe, and the wheat variety. This sourdough baguette made with hard white wheat & a little Kamut is about 73% hydration. But, once you are comfortable working with sourdough, recipes can have hydration increased with experience. I hope this helps.
