    I loved that video. I also love that you are doing some recipes with sourdough starter. I recently purchased an Ank mixer. This was the first video I’ve seen where the Ank was used with sourdough starter and freshly milled flour . Please keep them coming. Thank you thank you for all the great info you share.

    Yay...I missed you...while waiting for you, made monkey bread and the sourdough sandwich bread...they all came out perfect. I was raised in Puerto Rico and this is the kind of bread we ate (Pan Sobao) every morning with lots of butter...delicious😊

    I've had mine for a few weeks now and was wondering what grain mill you suggest. The Ankarsrum attachment or a stand alone grain mill.

    Kara, I have a question. What is the proper % of hydration when working with FMF. I have been baking for many years always with commercial flours. Now is a different ball game. I know flour is always 100% but if I use 60% of water, wouldn't be dry dough?

      That question is a little more difficult to answer with fresh milled flour, because it depends on the recipe, and the wheat variety. This sourdough baguette made with hard white wheat & a little Kamut is about 73% hydration. But, once you are comfortable working with sourdough, recipes can have hydration increased with experience. I hope this helps.

      @@GrainsInSmallPlaces Thank you I was closed, I thought it was 70%. I am trying to get a soft dough for my large Pullman pan. I will keep experimenting until I find the right texture and flavor.

      If you are talking about the scoops for the grain bins, they actually come with the grain bins. Here is link to them. I really like using them for everyday use. Then I refill them from larger bucket amounts. amzn.to/3pOp8MH
