I've been an ethical vegan for over 12 years now, so I am vegan for the animals not for health reasons (but the benefits are indisputable - just read the China Study!) I am so impressed with you Emmy and Paul, for giving this a try and sharing the outstanding results with your audience. Also, I must give a shout out to everyone in the comments section for being so positive and kind! We vegans sometimes get a reputation of being preachy, and none of my fellow vegans did that - so there goes that myth! My own husband is an omnivore, so no judgement on my part either. My go to vegetarian meal is a chick pea and vegetable stir fry. Cut into julienne strips any combination of veg you have like onion, pepper, carrots, zucchini, cabbage. Stiri fry till still crisp. Add a tin of drained chick peas. Mix all together and add sauce like sweet chilli or soya sauce to taste. Quick, easy and delicious!
I’m so glad you now like beans. There are so many different kinds. I challenge you to try a new bean twice a month. I think you’ll be pleasantly surprised. I fix a pot of beans about every 10 days. I use one pound and we get at least 3 meals for the three of us. If I make too much, beans freeze great. A little ham and bean soup with a little cabbage soup is delicious. Reminds us of minestrone. Vegan for 4 years here! I have endless recipes because I love to cook but here is an easy go-to off the top of my head. “Mushroom cream pasta”. 1/2 cup cashews, put in a bowl of hot water until covered and set on counter for 15 minutes (this makes them easier to blend smooth). While waiting on that, add 1 container chopped mushrooms to a skillet with 2 tbsps olive oil and sauté with 1/2 finely diced onion until soft. Set aside. Add softened drained cashews, 3/4 cup plant milk (any non sweetened is fine, I like oat milk) 1/3 cup nutritional yeast powder (tastes just like cheese not expensive, I like Trader Joe’s), 1/4 tsp salt, pepper, and 1 tsp garlic and onion powder to the cashews into your little blender and blend 30 seconds. Add to pan with mushrooms, onions and 1 pound cooked and drained pasta. Sometimes I add a little frozen spinach if I have it on hand and heat all together until hot throughout. It tastes like a restaurant quality dish with amazing flavor! Enjoy!!
The collards and black-eyed peas speak right to my Southern roots. In fact, those are two ingredients we eat on New Year’s for luck and prosperity! For an extra Southern touch, cornbread would be good with that. 😉
Emmy and Paul, it makes me so happy that you chose to create two vegan meals for your first challenge, and I see that you have a very big vegan crowd of followers! I have been vegan for 5 years and it was the best decision I could do for my health. The burgers and collards look so delicious, I'll definitely be trying those recipes. And thank you for being so considerate as to go to the length of finding out that sugar might not be vegan, not everybody knows that! Vegan here, and I will definitely try your recipes shown here. My family loves potato soup (use almond milk, potatoes, add some diced carrots and cabbage, onions, and green onions). Bean chili. Mashed potatoes with vegan cheesy sauce on top or mushroom gravy. Loaded baked potatoes. Pinto bean soup topped with yellow banana peppers. Stir fry veggies over rice. Bean or mushroom and veggie burritos. I freeze anything I can't eat in two days and make individual servings. Great for nights you don't want to cook and nothing goes to waste. Can take to work with you and it's like you're getting a free lunch. I love your curly hair, by the way. You're a lucky girl!

White chili. It’s made with white beans , cauliflower, patatoes, vegetables broth, garlic, cumin and chili powder. Top it with cheese, sour cream and coriander😊

Am I allowed to say how much I LOVE that you all are pushing the boundaries of what you're comfortable with? Big huge kudos...food preferences can be HUGE barriers and look at you two go. I love my IP too, for what it's worth, and my air fryer!
I am vegetarian and am moving towards being vegan. My go to lunch is a combination of avocado toast and beans on toast. I toast a large slice of sourdough bread. Then smash a quarter of an avocado and then top with canned beans of choice. I usually put hot sauce on top and enjoy. Miss DixieBelle is ADORABLE! Much love from Arizona 🌈✌🏾
Can't wait to try both recipes. I went whole food, plant based in December and love all the foods. One very simple item I do to keep in the fridge is one can kidney beans, one can black beans (both rinsed and drained), can of corn, and either a jar of salsa or fired roasted tomatoes. Heat up and can eat as a soup or topping on potatoes, etc. Sometimes I add potatoes and carrots to this mixture for a stew like soup. Nice flavor, inexpensive, goes a long way and can be used so many different ways. PS you will be surprised at how many diseases can be reversed through a whole food, plant based diet. I love it and love your channel.

I cook lots of vegan meals and one of my current favorites is Mango Curry It’s also an instant pot recipe. 2 cans garbanzo beans ( drained) 2 cups frozen mango 2TB Maple syrup 1 TB curry powder 1 tsp ginger 1 tsp coriander 1 tsp garlic powder 1 tsp onion powder 1/8 tsp cinnamon And a dash of red pepper flakes Add everything to your instant pot and cook on high pressure for 30 minutes Natural release. Great over rice!😀
The burger mix looks most appealing to me. I like Paul’s idea for tacos or enchiladas. I don’t have any vegan type recipes, I’m just omitting meat a couple of times a week. It’s more like a meal of all side dishes.
The older I get the less meat I eat. I truly believe that the western world eats too much meat, and eating less is not only good for our budgets, the environment and our health. I am going to make the beans, I love black eyed peas. I have never seen collard greens in shops here in Australia, will try kale instead. My favourite vegetarian meals are. Vegan Boston baked beans, vegetarian Red beans and rice, falafel, hummus and taboulli.
Congratulations on trying new things. I started to cut out meat last year in June 2021 and then started some intermittent fasting to eat healthier. Lost 15 lbs. One of my fav meals is refried black beans with salsa and shredded cabbage on a home made tortilla. I make them into a burrito, wrap in foil and put in the refrigerator. When I’m ready to eat I cook them at about 375 - 400 unwrapped in a toaster oven about 15 mins. I usually eat 1 1/2 to 2 with some fruit. There is an incredible New World that opens up with so many new flavors, pretty colors when the meat drops off.
So glad you were willing to try vegan recipes. I’ve been eating vegan/plant based for a little over a year now. There’s so many wonderful recipes out there. And with the price of meat . . . So glad I made the change! Great job!
I'm also a total plant-based eater...almost 7 years now...no meat, eggs, dairy, cheese, etc. I am sooo proud of you two! You're fearless! I eat this way all the time! (As a matter of fact, I am writing a cookbook....I have 6 months to get it done)....My hubby, not so much..he eats meat whenever he can and you know I've got critters...but he will eat "beastless" with me a couple of times a week! Nice video!! Being raised by two now late parents who experienced the food shortages during the Great Depression where eating meat was a luxury reserved for holidays and occasionally on Sundays mostly to flavor some vegetable, soup or casserole, many of those meatless dishes carried over to my childhood despite the fact that my parents could afford to readily purchase meat. My late Italian mother could whip together the most delicious meatless meals, and still a favorite of mine to this day was her potato, egg, and pepper omlet. And my father who grew up in south introduced us to tomato and mayo sandwiches especially good when made with fresh tomatoes picked right out of our garden. And my norma made the most delicious spaghetti sauce by just throwing in a couple of chunks of stick pepperoni for flavoring, and she always made extra sauce to put over her eggplant parmesan which was light, crispy, and melted in your mouth which the eggplants too came right out of our garden. And I suspect my mother and norna had the most beautiful skin even at the end of their lives because of their zero processed foods low mesat diets along with simple lifestyle.
We love lentils and brown rice, and onions and some water. We serve it in a pita or wrap. Add spices you like. Cook it until rice is done in a stockpot.
The meals looked scrumptious the wisteria a joy BUT Dixie stole the show. What a precious little girl with her soft brown eyes and waggerly tail waiting for you with all her love. Dearest little poppet.
OK this goes back to when I went meatless 63 years ago, Carrot Dogs! I parboil 4 carrots, if you like garlic throw a clove in the boiling water, if you have ever had a Sabaret, or a Nathans hot dog off a cart in New York City they have garlic in the boiling water. Don't let the carrots get soft just 1/2 way done. throw the carrot dogs on the grill and brush them with barbeque sauce. Add grilled onions, mustard, barbeque sauce, ketchup or sauerkraut, simple and so delicious, I used Ezekiel buns, they are sprouted wheat. You must try them, they are so good! Annies BBQ Sauce is vegan, I use Red Bermuda Onions slices thin and left in the whole slice, as the onions grill break apart the slices. Perfect for summer cookouts.

Grilled portobello mushrooms! Love this substitute for burgers. Dress them as you like. Also can be served with mashed potatoes, gravy and fresh veggie of your choice
Oops sorry I forgot a major ingredient in the mango curry recipe I shared. You also need 2 cups plant milk! I use lite coconut milk but any will do!!! 🤪
Our favorite meatless meal is just a baked potato (made in the air fryer) with butter, salt and pepper, cheese, sliced sauteed mushrooms, and whatever other veggies we happen to have! SO delicious, filling, and NO meat needed!
Great job in trying these vegan recipes! One meatless dish I like is toast with avocado spread over it and then put an over/easy egg on top. Or you could put the eggs over hashbrown potatoes and have toast on the side.

My favorite is the veggie chili with zucchini, yellow squash, corn, carrots, onions, lentils, black & kidney beans, diced tomatoes, tomato sauce and veggie broth. Seasonings boullion cube, Italian, cumin, sea salt, pepper, smoked paprika, red pepper flakes, minced garlic and onion powder. Tip: for dry beans soak in water overnight will soften better as they cook. Cook on low in crockpot 6-7 hours.
So glad you ventured into vegan recipes. I've been a (mostly) plant based eater for about a decade. Lowered my blood sugar and blood pressure drastically.

InstaPots are the best. I like to make rice and refried beans in mine. A YT channel called Plant Based Dads has some great Vegan recipes. Joey is awesome !
Good for you Paul and Emmy! I will admit I was not a huge fan of beans until I hit my 30s and started trying a lot of really creative recipes. So no recipes here but just some ideas that we use for vegan and vegetarian meals. I like to make minestrone soup without the ground beef sometimes and I use black, kidney and garbanzo beans. We love seasoned cannellini beans with brown rice. We really love quiche right now, for breakfast lunch or dinner, and it’s so versatile with the ingredients that you can add to it. You can also make a cassoulet which is a French casserole and just make it with beans instead of adding the meat to it. Can’t wait to see next Tuesday’s video!
Off the top of my head I don’t have a specific vegan recipe because I Veganized pretty much everything. But we do thoroughly enjoy any kind of Mexican food pumped up with beans and veggies, and we also like potatoes in our tacos! Asian stirfries, veggie pastas and pizzas, and if you are adventurous, tofu is incredibly versatile! It takes on the flavor of whatever you are making. It’s great in Asian food, but also makes an awesome breakfast sandwich! Happy cooking!
Thank you for the vegan burger recipe! A lot of the veggie burgers that I see are made with oats and my body just doesn't digest oats well so it's nice to see a non oat recipe!
I may have to try those bean burgers. My favorite meatless meal in our rotation is summer bean salad. I chop and add the following to it: black beans, corn, green pepper, onion, tomato, carrots and cucumber. After chopping the veggies I season the salad with lime juice, cayenne pepper, onion powder, garlic powder, Cajun seasoning and any other seasoning that seems like a good match.
Hubby and I watched you this morning and enjoyed seeing new recipes. We are not vegan but don't always have meat. My husband is 81 and I'm 75 so old eating habits are a challenge for us. My husband said he'd like the beans and collards but we'd have to leave out the smoke flavor, which doesn't agree with us. Looking forward to seeing what you do next. Blessings :)
Congratulations, you discovered the best basic seasoning to convert the two of you to liking basic brown/green lentils. Suggest adding about a 1/4 cup of tomato or pasta sauce of choice to your seasoning mixture while cooking the beans or lentils. The addition of some diced potatoes and or turnups is also a good addition to your black eyed pea or the lentil recipe. Vegan and vegetarian recipes really help a person explore so many new combinations of seasonings and combination fruits and or vegetables. A lot of the Weight Watcher quick start cookbooks from the 1980's and 1990's have good recipes that can easily be adapted to a vegan or vegetarian diet. Bon Appetit.

The recipes look delicious. My favorite meatless meal growing up was our "Garden Dinner". We had green beans and potatoes, corn on the cob, sliced cucumbers and tomatoes. All out of the garden. I haven't had luck with gardening. I miss when my dad used to have a big garden. The food was so good.
Oh my gosh! My dad would tell my mom "We are eating out oof the garden tonight!" All the wonderful things you mentioned and a loaf of Italian bread LOL!
Recently started watching your videos and enjoy your positivity. I’be been vegan for 15 years, so seeing you try vegan food with an open mind was lovely. My weekly meals are three bean chilli ( easy, cheap and delicious), lentil shepherd’s pie. Again cheap and easy. Always use puy or French lentils as they hold their shape and texture. Chickpea and veg curry. No meat loaf, gorgeous - so many recipes for this online. And a basic pasta sauce with roasted Mediterranean veg and pasta, which I have with a crusty roll and side salad. It’s always best to steer away from faux meats when giving vegan food to non vegans and it’s cheaper and way more healthy. It would be great to see you do some vegan baking. Vegan brownies are awesome and vegan sticky toffee pudding. ❤
If you are really ready to try some more vegan bean recipes I suggest substituting your regular spaghetti with the Barilla brand of protein+ pasta in the yellow boxed packaging. It is so yummy and more filling. The Ronzoni vegetable rotini pasta is also good for cold summer salads. It's the vegetable pasta made with spinach, zucchini, parsley and two other green veggies or herbs. A complete vegan meal using these two pastas. Suggest the Barilla protein+ elbow style pasta for this combination of pastas . These pastas cook a little faster then regular flour based pastas. The dark green Ronzoni vegetable rotini cooks rather fast. To take the meal plan to a next level to become a vegetarian meal add the real egg noodle pasta for your animal based protein. A true emergency pantry meal.
Great recipes!! My favorite appliance is my Instant pot...we are 7 yrs together now😁. I actually prefer vegetables over meat. I love veggie burgers and cabbage "steaks". 😋 (head of cabbage cut in think steak like slices and seasoned with your favorite spices and then roasted in the oven)
Great job! Emmy, I'm Italian-American like you, and I love Polenta with Garlicky Greens. Chop any greens--chard, spinach, kale, collards, etc.-- and saute in a little olive oil with plenty of fresh minced garlic. You could add onion, red pepper flakes, however you like it. Serve over soft cooked polenta that you've topped with Parmesan or a vegan alternative, if preferred. Leftover polenta can be cut into slices the next day and pan fried or baked until crispy on both sides. Thanks for another fun video!
Love this! I make quesadillas....maybe shredded cheese, diced tomato, diced green or jalapeno pepper, etc.....OR shredded cheese and seasoned black beans...whatever we're in the mood for. Serve with salsa/sour cream/guacamole/refried beans, etc. I make sweet potato salad: Boil or bake sweet potatoes until tender, cool, peel, dice into desired consistency (I like it pureed/my family likes a small dice...you can guess who wins, lol)...add to a bowl, chop red or other onion fine and add to bowl, add a little salt, cayenne or black pepper, smoked paprika, and a bit of honey...add mayo to desired consistency. I like this hot...my family eats it cold. God bless!
Thank you for the inspiration. I like to pop a well cooked sweet potato in the blender with plenty of garlic, several quick splashes of lemon juice, tahini, and enough water to blend it smooth...sweet potato hummus...put that on your brushetta.
My favorite meal that I make all the time is what I call Mexican rice bowl. Brown rice on the bottom then 1/2 cup black beans then cooked peppers and onions,topped with green onions and salsa and quacamole

We have cooked a lot of vegetarian meals over the years. Like you I'm not much of a bean eater but there are a few that I make that we eat. I was told years ago by my sister-in-law, who was a vegetarian, that if you want to start cooking vegetarian meals get a cookbook from the Moosewood Restaurant. It is a little restaurant in upstate New York and their recipes are absolutely fantastic. They do have one cookbook where all the meals take less than 45 minutes to make. It is called" Moosewood Restaurant Cooks at Home". Look it up and see if there are any recipes in there that appeal to you. I have never been disappointed by their recipes, and most of them are very simple to make. If you have a well-stocked pantry, you probably have most of the ingredients at home. My favorite recipe from the Moosewood Restaurant cookbook that I mentioned is lemon zucchini pasta. Fresh lemons zucchini that is grilled and your favorite pasta. It tastes like sunshine.

Want to try both recipes! I'm a "wing-it" type cook but spaghetti conversion is so easy. Just substitute mushrooms for the meat. A few months ago, I made "Chinese cashew chicken" WITHOUT the chicken. Ir was just as good as the Chinese cafe's!

My favourite meatless meals are soups and I usually put collard greens in some soups. It’s how I eat vegetables the best way for me because I was raised eating soup that my mom made the best. My favorite vegan meal is chili!! I saute: • Onions • Garlic • Veggies I have in the fridge • Hot chili seasoning mix from Aldi (I think the brand is stone mill, they have mild seasoning packets too) • Corn Then I add in water and cooked beans (any kind I have on hand) and simmer it for 5 minutes (it doesn't need to cook for very long because the beans are already cooked and the vegetables are already sauteed). Easy peasy It's really just an easy recipe, I use whatever I have in the fridge. I make a big batch on Sunday and then heat it up to put in my thermos to take to work for the week
my favorite sort of vegan recipe is using some decent brand jar of plain marinara sauce and chopped up and sauteed zucchini and mushrooms-you can add can of garbanzo beans and eat this with any pasta-you will not miss meat in it at all. Im glad you found use for your insta-pot -sometimes we have gadgets in the kitchen and takes us some time to finally get used to them and even like them.

My go to vegetarian meal is a chick pea and vegetable stir fry. Cut into julienne strips any combination of veg you have like onion, pepper, carrots, zucchini, cabbage. Stiri fry till still crisp. Add a tin of drained chick peas. Mix all together and add sauce like sweet chilli or soya sauce to taste. Quick, easy and delicious!
Once a week, I serve my family lentil tacos. Been eating tacos this way for years, absolutely delicious!!
I’m so glad you now like beans. There are so many different kinds. I challenge you to try a new bean twice a month. I think you’ll be pleasantly surprised. I fix a pot of beans about every 10 days. I use one pound and we get at least 3 meals for the three of us. If I make too much, beans freeze great. A little ham and bean soup with a little cabbage soup is delicious. Reminds us of minestrone. Vegan for 4 years here! I have endless recipes because I love to cook but here is an easy go-to off the top of my head. “Mushroom cream pasta”. 1/2 cup cashews, put in a bowl of hot water until covered and set on counter for 15 minutes (this makes them easier to blend smooth). While waiting on that, add 1 container chopped mushrooms to a skillet with 2 tbsps olive oil and sauté with 1/2 finely diced onion until soft. Set aside. Add softened drained cashews, 3/4 cup plant milk (any non sweetened is fine, I like oat milk) 1/3 cup nutritional yeast powder (tastes just like cheese not expensive, I like Trader Joe’s), 1/4 tsp salt, pepper, and 1 tsp garlic and onion powder to the cashews into your little blender and blend 30 seconds. Add to pan with mushrooms, onions and 1 pound cooked and drained pasta. Sometimes I add a little frozen spinach if I have it on hand and heat all together until hot throughout. It tastes like a restaurant quality dish with amazing flavor! Enjoy!!

Vegan here, and I will definitely try your recipes shown here. My family loves potato soup (use almond milk, potatoes, add some diced carrots and cabbage, onions, and green onions). Bean chili. Mashed potatoes with vegan cheesy sauce on top or mushroom gravy. Loaded baked potatoes. Pinto bean soup topped with yellow banana peppers. Stir fry veggies over rice. Bean or mushroom and veggie burritos. I freeze anything I can't eat in two days and make individual servings. Great for nights you don't want to cook and nothing goes to waste. Can take to work with you and it's like you're getting a free lunch. I love your curly hair, by the way. You're a lucky girl!

I am vegetarian and am moving towards being vegan. My go to lunch is a combination of avocado toast and beans on toast. I toast a large slice of sourdough bread. Then smash a quarter of an avocado and then top with canned beans of choice. I usually put hot sauce on top and enjoy. Miss DixieBelle is ADORABLE! Much love from Arizona 🌈✌🏾

Can't wait to try both recipes. I went whole food, plant based in December and love all the foods.
One very simple item I do to keep in the fridge is one can kidney beans, one can black beans (both rinsed and drained), can of corn, and either a jar of salsa or fired roasted tomatoes. Heat up and can eat as a soup or topping on potatoes, etc. Sometimes I add potatoes and carrots to this mixture for a stew like soup. Nice flavor, inexpensive, goes a long way and can be used so many different ways.
PS you will be surprised at how many diseases can be reversed through a whole food, plant based diet. I love it and love your channel.

I’m happy you enjoyed your vegan recipes! I cook lots of vegan meals and one of my current favorites is Mango Curry It’s also an instant pot recipe.
2 cans garbanzo beans ( drained)
2 cups frozen mango
2TB Maple syrup
1 TB curry powder
1 tsp ginger
1 tsp coriander
1 tsp garlic powder
1 tsp onion powder
1/8 tsp cinnamon
And a dash of red pepper flakes
Add everything to your instant pot and cook on high pressure for 30 minutes
Natural release. Great over rice!😀

The burger mix looks most appealing to me. I like Paul’s idea for tacos or enchiladas. I don’t have any vegan type recipes, I’m just omitting meat a couple of times a week. It’s more like a meal of all side dishes.

The older I get the less meat I eat. I truly believe that the western world eats too much meat, and eating less is not only good for our budgets, the environment and our health. I am going to make the beans, I love black eyed peas. I have never seen collard greens in shops here in Australia, will try kale instead.
My favourite vegetarian meals are. Vegan Boston baked beans, vegetarian Red beans and rice, falafel, hummus and taboulli.

Congratulations on trying new things. I started to cut out meat last year in June 2021 and then started some intermittent fasting to eat healthier. Lost 15 lbs. One of my fav meals is refried black beans with salsa and shredded cabbage on a home made tortilla. I make them into a burrito, wrap in foil and put in the refrigerator. When I’m ready to eat I cook them at about 375 - 400 unwrapped in a toaster oven about 15 mins. I usually eat 1 1/2 to 2 with some fruit. There is an incredible

Nice video!! Being raised by two now late parents who experienced the food shortages during the Great Depression where eating meat was a luxury reserved for holidays and occasionally on Sundays mostly to flavor some vegetable, soup or casserole, many of those meatless dishes carried over to my childhood despite the fact that my parents could afford to readily purchase meat. My late Italian mother could whip together the most delicious meatless meals, and still a favorite of mine to this day was her potato, egg, and pepper omlet. And my father who grew up in south introduced us to tomato and mayo sandwiches especially good when made with fresh tomatoes picked right out of our garden. And my norma made the most delicious spaghetti sauce by just throwing in a couple of chunks of stick pepperoni for flavoring, and she always made extra sauce to put over her eggplant parmesan which was light, crispy, and melted in your mouth which the eggplants too came right out of our garden. And I suspect my mother and norna had the most beautiful skin even at the end of their lives because of their zero processed foods low mesat diets along with simple lifestyle.

We love lentils and brown rice, and onions and some water. We serve it in a pita or wrap. Add spices you like. Cook it until rice is done in a stockpot.

OK this goes back to when I went meatless 63 years ago, Carrot Dogs! I parboil 4 carrots, if you like garlic throw a clove in the boiling water, if you have ever had a Sabaret, or a Nathans hot dog off a cart in New York City they have garlic in the boiling water. Don't let the carrots get soft just 1/2 way done. throw the carrot dogs on the grill and brush them with barbeque sauce. Add grilled onions, mustard, barbeque sauce, ketchup or sauerkraut, simple and so delicious, I used Ezekiel buns, they are sprouted wheat. You must try them, they are so good! Annies BBQ Sauce is vegan, I use Red Bermuda Onions slices thin and left in the whole slice, as the onions grill break apart the slices. Perfect for summer cookouts.

Our favorite meatless meal is just a baked potato (made in the air fryer) with butter, salt and pepper, cheese, sliced sauteed mushrooms, and whatever other veggies we happen to have! SO delicious, filling, and NO meat needed!

We do try to eat healthy on a regular basis...
My favorite is the veggie chili with zucchini, yellow squash, corn, carrots, onions, lentils, black & kidney beans, diced tomatoes, tomato sauce and veggie broth. Seasonings boullion cube, Italian, cumin, sea salt, pepper, smoked paprika, red pepper flakes, minced garlic and onion powder. Tip: for dry beans soak in water overnight will soften better as they cook. Cook on low in crockpot 6-7 hours.

I make a chickpea stew every week. Canned crushed tomatoes, rice, potatoes, frozen mixed veg, spinach, frozen cauliflower. Garlic powder, season salt, curry, onion powder, pepper, tumeric. Easy, healthy, cheap.

Good for you Paul and Emmy! I will admit I was not a huge fan of beans until I hit my 30s and started trying a lot of really creative recipes. So no recipes here but just some ideas that we use for vegan and vegetarian meals. I like to make minestrone soup without the ground beef sometimes and I use black, kidney and garbanzo beans. We love seasoned cannellini beans with brown rice. We really love quiche right now, for breakfast lunch or dinner, and it’s so versatile with the ingredients that you can add to it. You can also make a cassoulet which is a French casserole and just make it with beans instead of adding the meat to it. Can’t wait to see next Tuesday’s video!

Off the top of my head I don’t have a specific vegan recipe because I Veganized pretty much everything. But we do thoroughly enjoy any kind of Mexican food pumped up with beans and veggies, and we also like potatoes in our tacos!
Asian stirfries, veggie pastas and pizzas, and if you are adventurous, tofu is incredibly versatile! It takes on the flavor of whatever you are making. It’s great in Asian food, but also makes an awesome breakfast sandwich! Happy cooking!

I may have to try those bean burgers. My favorite meatless meal in our rotation is summer bean salad. I chop and add the following to it: black beans, corn, green pepper, onion, tomato, carrots and cucumber. After chopping the veggies I season the salad with lime juice, cayenne pepper, onion powder, garlic powder, Cajun seasoning and any other seasoning that seems like a good match.

Hubby and I watched you this morning and enjoyed seeing new recipes. We are not vegan but don't always have meat. My husband is 81 and I'm 75 so old eating habits are a challenge for us. My husband said he'd like the beans and collards but we'd have to leave out the smoke flavor, which doesn't agree with us. Looking forward to seeing what you do next. Blessings :)
Yes, you could use regular Paprika instead of smoked.
Congratulations, you discovered the best basic seasoning to convert the two of you to liking basic brown/green lentils. Suggest adding about a 1/4 cup of tomato or pasta sauce of choice to your seasoning mixture while cooking the beans or lentils. The addition of some diced potatoes and or turnups is also a good addition to your black eyed pea or the lentil recipe. Vegan and vegetarian recipes really help a person explore so many new combinations of seasonings and combination fruits and or vegetables. A lot of the Weight Watcher quick start cookbooks from the 1980's and 1990's have good recipes that can easily be adapted to a vegan or vegetarian diet. Bon Appetit.

Recently started watching your videos and enjoy your positivity. I’be been vegan for 15 years, so seeing you try vegan food with an open mind was lovely.
My weekly meals are three bean chilli ( easy, cheap and delicious), lentil shepherd’s pie. Again cheap and easy. Always use puy or French lentils as they hold their shape and texture. Chickpea and veg curry. No meat loaf, gorgeous - so many recipes for this online. And a basic pasta sauce with roasted Mediterranean veg and pasta, which I have with a crusty roll and side salad. It’s always best to steer away from faux meats when giving vegan food to non vegans and it’s cheaper and way more healthy.
It would be great to see you do some vegan baking. Vegan brownies are awesome and vegan sticky toffee pudding. ❤

If you are really ready to try some more vegan bean recipes I suggest substituting your regular spaghetti with the Barilla brand of protein+ pasta in the yellow boxed packaging. It is so yummy and more filling. The Ronzoni vegetable rotini pasta is also good for cold summer salads. It's the vegetable pasta made with spinach, zucchini, parsley and two other green veggies or herbs. A complete vegan meal using these two pastas. Suggest the Barilla protein+ elbow style pasta for this combination of pastas . These pastas cook a little faster then regular flour based pastas. The dark green Ronzoni vegetable rotini cooks rather fast. To take the meal plan to a next level to become a vegetarian meal add the real egg noodle pasta for your animal based protein. A true emergency pantry meal.

Great job! Emmy, I'm Italian-American like you, and I love Polenta with Garlicky Greens. Chop any greens--chard, spinach, kale, collards, etc.-- and saute in a little olive oil with plenty of fresh minced garlic. You could add onion, red pepper flakes, however you like it. Serve over soft cooked polenta that you've topped with Parmesan or a vegan alternative, if preferred. Leftover polenta can be cut into slices the next day and pan fried or baked until crispy on both sides. Thanks for another fun video!

I make quesadillas....maybe shredded cheese, diced tomato, diced green or jalapeno pepper, etc.....OR shredded cheese and seasoned black beans...whatever we're in the mood for. Serve with salsa/sour cream/guacamole/refried beans, etc.
I make sweet potato salad: Boil or bake sweet potatoes until tender, cool, peel, dice into desired consistency (I like it pureed/my family likes a small dice...you can guess who wins, lol)...add to a bowl, chop red or other onion fine and add to bowl, add a little salt, cayenne or black pepper, smoked paprika, and a bit of honey...add mayo to desired consistency. I like this hot...my family eats it cold.

We have cooked a lot of vegetarian meals over the years. Like you I'm not much of a bean eater but there are a few that I make that we eat. I was told years ago by my sister-in-law, who was a vegetarian, that if you want to start cooking vegetarian meals get a cookbook from the Moosewood Restaurant. It is a little restaurant in upstate New York and their recipes are absolutely fantastic. They do have one cookbook where all the meals take less than 45 minutes to make. It is called" Moosewood Restaurant Cooks at Home". Look it up and see if there are any recipes in there that appeal to you. I have never been disappointed by their recipes, and most of them are very simple to make. If you have a well-stocked pantry, you probably have most of the ingredients at home.
My favorite recipe from the Moosewood Restaurant cookbook that I mentioned is lemon zucchini pasta. Fresh lemons zucchini that is grilled and your favorite pasta. It tastes like sunshine.

Want to try both recipes! I'm a "wing-it" type cook but spaghetti conversion is so easy. Just substitute mushrooms for the meat. A few months ago, I made "Chinese cashew chicken" WITHOUT the chicken. Ir was just as good as the Chinese cafe's!

You can soak the dried beans overnight and it will cook up much quicker
My favourite meatless meals are soups and I usually put collard greens in some soups. It’s how I eat vegetables the best way for me because I was raised eating soup that my mom made the best. It’s also economical. You have very nice recipes on your channel and you are such a sweet couple. Blessings to you also❤️

My favorite vegan meal is chili!!
I saute:
• Onions
• Garlic
• Veggies I have in the fridge
• Hot chili seasoning mix from Aldi (I think the brand is stone mill, they have mild seasoning packets too)
• Corn
Then I add in water and cooked beans (any kind I have on hand) and simmer it for 5 minutes (it doesn't need to cook for very long because the beans are already cooked and the vegetables are already sauteed). Easy peasy
It's really just an easy recipe, I use whatever I have in the fridge.
I make a big batch on Sunday and then heat it up to put in my thermos to take to work for the week

my favorite sort of vegan recipe is using some decent brand jar of plain marinara sauce and chopped up and sauteed zucchini and mushrooms-you can add can of garbanzo beans and eat this with any pasta-you will not miss meat in it at all. Im glad you found use for your insta-pot -sometimes we have gadgets in the kitchen and takes us some time to finally get used to them and even like them.

Haluski! Cabbage and noodles are so delicious. Just make sure the noodles are eggless and use a vegan butter. Lots of garlic makes it even better!
