The best dipping sauce for those coconut shrimp is the sweet and sour, but I get how the pineapple will work too since it’s for the tartness. Go to an Asian market and the sweet and sour dipping sauces there are more legit. Butterfly them, that way you’ll have a bigger ratio to bite on. What I also do btw is to freeze these shrimp with the batter for about 15-20 minutes, then fry. Also, frying these halfway cooked is also good to be frozen and put on an air fryer at a later time.
