A weed in the United States, but a lettuce in other parts of the world, Lambsquarters (Chenopodium album) is grown on the Spence Farm as a cash crop. A chef at the event, Andrew Parks, works with the Horsch Radish farm-to-table restaurant in Normal, Illinois, and said they mix it with other salad greens, or cook it down with some pork fat.
