Masa hendak pecahkan biji jagungnya, saya guna cara manual, kalau mampu beli mesin hot air popcorn tidak mahal di shopee juga. Thank God the recipe is useful to others 😊. My advice is, just increase the volume of the kernels a bit, then adjust. It will make the sugar coat slightly thin, just nice for elderly and kids. Hope that's help. I am really happy for you.🤩

@@CinDeCook you can experiment with it. Be creative and you'll achieve something good. Using Gula apong might result slightly darker I think, don't know the boiling point of it, just be careful not to burn the sugar. It may have better flavour, who knows. Have fun exploring and experimenting 🤩

For the time being, not yet. I did it several times, couldn't find the sweet spot. I will make the video if I manage to master it. But the basics are, vegetable oil mix it with powdered cheese or grated. Have to find the right cheese combination and mixing coating technique. But definitely, using rotating tumbler when mixing could finally tune it. Hope this help.😊

Sama2, Golden Syrup itu ada di jual di toko kue atau kedai bahan bakeri, kalau tiada x mengapa tapi kurang rasanya. Boleh dicuba tanpa sirap atau dengan sirap. - Tujuan pakai golden syrup,corn syrup atau glucose syrup ialah kerana ia adalah inverted sugar, jadi bila ada dalam adunan gula, ketika masak adunan tidak aka crystalize/mengeras di tepi periuk. Itu tujuannya selain rasa.

I put the vanilla just before putting the bicarbonate soda..In the video I forgot to put it in 😂, don't put it early or the vanilla flavour will degrade a bit.

You're right, I tried putting the vanilla at the start and I can barely taste it at the end. My last question to you is regarding your butter quantity. I've tried other methods and recipes and they all call for 70gm - 80gm of butter. Any reason why you chose to use only 30gm?
@@hidirj Actually I don't have any accurate answer for this question scientifically, for me it's all about flavour and to loosen the hot sugar a bit, instead of being too thick. I use small quantity of butter because I don't want my sugar mixture being too runny and ending up with soggy popcorn after you mix it with the kernels. But in the end it is up to your liking. I hope this answers your question.☺️

Hi. saya nak tanya, kalau kita guna candy termometer, tahap gula yang mana satu yang perlu kita guna sebelum masukkan butter tu. dalam video ada bagitahu tahap "hard crack", klau kita buat sampai tahap caramel boleh ke? sebab kalau saya guna gula putih, masa tahap "hard crack ", gula tu belum bertukar jadi kekuningan pun lagi. Hard crack nak ke caramel. Butter saya letak mcm dalam video dari awal atau sehingga gula mula menggelegak. Yg penting gula sampai tahap untuk ia jadi keras semula seperti hard crack atau caramel. Mcm steak, nak medium well ke well done..kalau well done tu umpama caramel, tapi kalau nak medium sedikit umpama hard crack. Maaf kalau penjelasan saya kurang jelas. Yg penting boleh experiment dengan berbagai suhu dan faham asas gula.

Hi..I'm not the expert to answer your question but I can share a few thoughts regarding it. Previously, I did my own research for caramel popcorn throughout the internet. One of my references is Mr Greg Kettle Corn and garret's popcorn video. There are few things that you must bear in mind regarding this business, 1. Appliances 2. Recipe 3. Packaging. Make sure you understand everything about popcorn from the kernels till the finish product. You must know the type of corn kernels to use, butterfly or mushroom. Learn how to coat the popcorn. A must appliances are kernel popper and coating machine( mixing tumbler to cook the sugar) and a cooling rack. For cheese corn, the basic ingredients are cheese powder and vegetable oil and another few flavourings ingredients. I did it a few times but couldn't find the sweet spot, you need mixing tumbler for good coating. For caramel, you just need to understand the science of sugar/candy making, how it works and so. Quality is important since my benchmark is Garret's Caramel Corn. So I try to get as close as theirs. I hope this help. Thanks for asking. I hope you can succeed in this business.☺️

Bergantung, kalau letak silica gel atau apa2 penyerap oksigen , shelf life dia panjang sikit. Biasanya fresh simpan 2 minggu. Kalau lepas buka 2-3 hari.
Kalau tak guna bicarbonate soda tu,nanti gula x keras cantik,tebal dan melekat di gigi. Selain untuk volume coating permukaan popcorn, kadar ph gula karamel akan menentukan tekstur akhir gula pada popcorn. kadar alkali pada gula akan tinggi dengan memasukkan b.soda, ia akan memberi tekstur keras dan rangup pada gula itu. Karbon dioksida yang terhasil itu akan menjadikan adunan gula sedikit ringan dan nipis ketika coating popcorn,menjadikan ia rangup. Ada melibatkan proses tindakbalas kimia disitu saya x pandai nak explain. Saya kurang arif engan penggunaan oven. Harap membantu.
The sugar did not reach the correct temp..less than required. If you are not using candy thermometer, just eyeball it..look at the sugar condition, bubbling mad, and almost reaching the caramel stage. The ideal stage is between hard crack stage and caramel stage. If less than that the sugar will felt like nougat consistency. This take time to master..practice more, you will get it..God's Will..😊

The type of corn kernels. For common popcorn is Butterfly and for the spherical is Mushroom. You can get at your local supermarket or bakery shop.

@@blal4223 i think commercially, they use nitrogen gas to remove the oxygen in packaging and it will prolonged the shelf life of the popcorn.

Sama2, Golden Syrup itu ada di jual di toko kue atau kedai bahan bakeri, kalau tiada x mengapa tapi kurang rasanya. Boleh dicuba tanpa sirap atau dengan sirap. - Tujuan pakai golden syrup,corn syrup atau glucose syrup ialah kerana ia adalah inverted sugar, jadi bila ada dalam adunan gula, ketika masak adunan tidak aka crystalize/mengeras di tepi periuk. Itu tujuannya selain rasa.

Hi there, I wanted to know when you add the vanilla essence. In the video you didn't really use it. Do I add it at the start with the sugar, water and syrup? Or at the end with the baking soda?
I put the vanilla just before putting the bicarbonate soda..In the video I forgot to put it in 😂, don't put it early or the vanilla flavour will degrade a bit.

My last question to you is regarding your butter quantity. I've tried other methods and recipes and they all call for 70gm - 80gm of butter. Any reason why you chose to use only 30gm?
@@hidirj Actually I don't have any accurate answer for this question scientifically, for me it's all about flavour and to loosen the hot sugar a bit, instead of being too thick. I use small quantity of butter because I don't want my sugar mixture being too runny and ending up with soggy popcorn after you mix it with the kernels. But in the end it is up to your liking. Hi. saya nak tanya, kalau kita guna candy termometer, tahap gula yang mana satu yang perlu kita guna sebelum masukkan butter tu. dalam video ada bagitahu tahap "hard crack", klau kita buat sampai tahap caramel boleh ke? sebab kalau saya guna gula putih, masa tahap "hard crack ", gula tu belum bertukar jadi kekuningan pun lagi. Saya tanya cuma nakkan kepastian, kenapa dipanggil karamel popcorn, kalau gula belum sampai tahap karamel (hard crack). Terima kasih.
Hard crack nak ke caramel. Butter saya letak mcm dalam video dari awal atau sehingga gula mula menggelegak. Yg penting gula sampai tahap untuk ia jadi keras semula seperti hard crack atau caramel. Mcm steak, nak medium well ke well done..kalau well done tu umpama caramel, tapi kalau nak medium sedikit umpama hard crack. Maaf kalau penjelasan saya kurang jelas. Yg penting boleh experiment dengan berbagai suhu dan faham asas gula.

Bicarbonate Soda and Golden Syrup.. Other places in the world, i have no ideas which being used. You can google for it for further information. Hope this help. Mainly in US, they use corn syrup, ive watched in youtube.

In US there is lyles golden syrup.
For the Golden syrup we use dark corn syrup and bicarbonate of soda is baking soda.

Hi..I'm not the expert to answer your question but I can share a few thoughts regarding it. Previously, I did my own research for caramel popcorn throughout the internet. One of my references is Mr Greg Kettle Corn and garret's popcorn video. There are few things that you must bear in mind regarding this business, 1. Appliances 2. Recipe 3. Packaging. Make sure you understand everything about popcorn from the kernels till the finish product. You must know the type of corn kernels to use, butterfly or mushroom. Learn how to coat the popcorn. A must appliances are kernel popper and coating machine( mixing tumbler to cook the sugar) and a cooling rack. For cheese corn, the basic ingredients are cheese powder and vegetable oil and another few flavourings ingredients. I did it a few times but couldn't find the sweet spot, you need mixing tumbler for good coating. For caramel, you just need to understand the science of sugar/candy making, how it works and so. Quality is important since my benchmark is Garret's Caramel Corn. So I try to get as close as theirs. I hope this help. Thanks for asking. I hope you can succeed in this business.☺️

Bergantung, kalau letak silica gel atau apa2 penyerap oksigen , shelf life dia panjang sikit. Biasanya fresh simpan 2 minggu. Kalau lepas buka 2-3 hari.

Kalau tak guna bicarbonate soda tu,nanti gula x keras cantik,tebal dan melekat di gigi. Selain untuk volume coating permukaan popcorn, kadar ph gula karamel akan menentukan tekstur akhir gula pada popcorn. kadar alkali pada gula akan tinggi dengan memasukkan b.soda, ia akan memberi tekstur keras dan rangup pada gula itu. Karbon dioksida yang terhasil itu akan menjadikan adunan gula sedikit ringan dan nipis ketika coating popcorn,menjadikan ia rangup. Ada melibatkan proses tindakbalas kimia disitu saya x pandai nak explain. Saya kurang arif engan penggunaan oven. Harap membantu.

The sugar did not reach the correct temp..less than required. If you are not using candy thermometer, just eyeball it..look at the sugar condition, bubbling mad, and almost reaching the caramel stage. The ideal stage is between hard crack stage and caramel stage. If less than that the sugar will felt like nougat consistency. This take time to master..practice more, you will get it..God's Will..😊

@@menmengenius9762 I use 150gm brown sugar,50gm water,30gm butter, a squirt of vanilla, 1 tbs golden syrup or corn syrup and 1tsp bicarbonate soda. You can adjust the recipe according to your preferences. Lastly, some salt. Hope this help.
