    Thanks for your time and effort to make this video, always like to get new info on mods and whatnot. I'm not super new to BBQ but I am new to cooking on an offset so it's always nice to see how other folks are doing in a similar situation. Cheers man!

    The kids got me this smoker for fathers day. I love it!! Have used it every weekend since. And yes, fire management is a challenge. I need to try some of these mods. Thanks for the tips

      I found installing a smoke stack extension mod helped the exhaust air draw more fresh air through the system more than any other mod. I also have found splitting the wood small and building a bigger bed of embers helps for later logs in the cook because you get cleaner burning wood and less white smoke (creosote) than if you just try to force a lot of air through the system. I'm still playing with elevating the coal grate as elevating it makes the hot coals fall down and consume faster when I really want them to burn slower and longer.

      @@floopflarp please keep me posted on your air flow system. This sounds incredible! Having great air flow in essential to delicious bbq. In most cases, that matters more than the seasonings do. That bitter white smoke will kill the flavor quickly. I appreciate your comments, and be safe my friend!

    I like the point you bring up on the fire box height and adding the extra grate on top to allow the wood to get more oxygen . I am still working on the tuning plate but over all I like your set up.Thanks for sharing.

      Thanks for your comment Mr. Micron. This set up works well for me. I have tried tuning plates with little luck. Actually, cooking in pans has helped as they help shield the meat from direct heat, and the pans can hold fluids that can keep meat moist. I almost exclusively cook in pans now, most of the time with butter in them. Be safe my friend!

    Great video. Just got my Ok Joe on Sunday. Put it together yesterday. Test run on Thursday. You have yours dialed in. I have one mod coming. I bought the LavaLock stack lowering kit. Made sense so the heat and smoke would be at meat level.

    I love my Oklahoma joe sir,i have the same slide out racks you have ,had my firebox welded on too my main smoker . Cooks some delicious ribs,chicken,tri tip whatever one likes .good bless you

    Hey brother I seen a good tip for that rust on the fire box. Mad Scientist BBQ recommends spraying it with oil every time you cook. I do that to my smoker and it keeps it looking good. That way you don't build up to much rust. Hope that helps.

    Thx for the update, great video. Couple of questions. I have the two piece baffle made for this grill and was just curious if this is why I cant get to 300 degrees? If it gets there it don't stay for long. Also was wondering if the heat is fairly consistent all the way across with the baffle done your way? One last question, what is the dimensions on the expansion rack. Best mod I've seen so far. Thank again.

      I had a baffle and had the same issue. I think it may be too thick. Remember, your heat source has to heat the baffle before it travels to the grill grates. I only use one piece of mine( the flat one) and it seems to work better. Even with both pieces I still had a 50-75 degree difference. I never got the results some folks say they got. I'll have to get the dimensions for you and post them. I do like the upper rack as it is good for crisping and fast cooking as it is hotter up top.     Great video! I just got an older Longhorn smoker in great shape! The previous owner had the firebox welded to the cook chamber and the top and bottom of the firebox are seam welded. Nice to see this done on others. Mine also has a custom top rack. Cooked 16 chicken thighs on it Saturday and was the best I've ever had.

      My probes work fine and I have had them a few years now being pushed down on a clamped lid. You shouldn't have to drill any holes.

    hello sir..you probably should spray your smoker with canola oil on your next bbq to maintain it. it'll hold off the rust and it'll turn into a darker shiny smoker. spray all outside

    Have you done anything to strengthen the legs on the Oklahoma joe smoker? The lower bolts stripped out on the lower legs.

      Hello Johnathon. I think you are going to enjoy the OKJ! I would try it without them and see how bad the smoke leaks around the doors. I suspect it may be pretty bad. Doing that has all but stopped 95% of my smoke loss in that area, and I still haven't had to replace them. Thanks for subscribing, and be safe my friend!

      @@MarcusandMarcusInc I feel like the clamps are a little overkill, I always have a housing brick by my foot and resting it on the handle of the OKJ seems to add enough total pressure to stop any leaks as long as you are using gasket!

      @Devonaut..thanks for your comment. I like the clamps help keep the cook chamber good and tight. Each unit is different. I have seen some folks who didn't use any gaskets at all that leak very little. Do what works best for your unit! Be safe out there my friend!

    Whenever i cook i just spray cooking oil on my firebox once in awhile and good too go keeps it from rusting up i9n the winter.

      @Gendarme à Londres..greetings my friend! I hope you are having a wonderful day. Sealing those spots you spoke of are a must on the OKJ. I did it once and haven't had to do it again. I used to leave it outside, but now I keep it in my garage. That goes for both of my smokers/grill. I use to leave them out when I was less serious about smoking. Take care and happy grilling!       Turns out everything came today...
      OKJ, big temp gauges, baffle plates, charcoal basket, Vitcas "concrete" sealant...
      Currently doing the first ever smoke, all pretty tight apart from main door leaking, seems warped from factory, about half inch gap half way up on both sides...
      Need some of those little red latches!
      I'll start seasoning tomorrow, weather permitting...
      Hopefully first tomahawk Saturday...

    You don't actually need to repaint the exterior metal and I recommend not doing so. High heat paint flakes off on the firebox too easily. Instead I recommend spraying canola or another high smoke point oil on the outside as you see bare metal. The heat from the fire will carbonize the oil and turn it into a black seasoning that will prevent further rusting. If it's already flaking from rust give it a good cleaning with a wire brush first and then oil and you're good to go. It'll turn black and protect better than the original paint!

      @Don Myers I really appreciate those kind words! I have to say yes with notes on the Oklahoma Joe. Once they are broken in I truly believe they can compete with the more expensive smokers out there. Learning the basics (fire management, cook temps, clean smoke, etc) comes with time. I would never start with a smoker. Master a basic grill and work your way up to smoking. I almost gave up smoking meats until I started paying close attention to the pro's and reading their books. You won't be perfect at it to start with, but keep on pushing and you will find your way! Stay safe my brother and watch your 6!

    With respect to rust, season it with canola oil. Spray all over, light a hot fire and let it go hours . repeat for maintenance

    Put your ribs in a cooler and pour apple cider vinegar and let it soak for a couple hours or over night that what I do my fam have high blood pressure to
