Try turning your oven hotter (425 F) putting the turnips on one sheet pan with more space around them so that they roast, not steam, put carrots on another and leave them in the oven until edges are getting golden-brown- this carmelizes the sugars in both and gives that crispier outside, tender inside combination. You can also hit them with a few minutes under the broiler after roasting and get that french fry texture. Works great with sunchokes and parsnips too.

You may also get more of the taste and texture you were hoping for out of the turnips by having the pan less crowded giving more space between each piece of veg.
For better charring, drying and carmelization of the natural sugars, the additional space allows all that to happen rather than streaming.

I roast carrots with a middle eastern spice blend Za'atar. Everyone raves about them and I have to make them for main holidays. I cut them in round chunks or wavy slices.
Turnips, parsnips, and potatoes roast at the same length of time and can be combined. Season with garlic, onion, thyme and rosemary or the previously mentioned Za'atar seasoning. . I cut pieces into smaller cubes or slices with a cutter that makes ridges for better water evaporation during roasting.

You mentioned the turnips being too "juicy." That's largely due to the crowding of the pan where they ended up steaming, more than they roasted.

My first results were "meh" also on turnips-I had combined them with potatoes and carrots. I had better luck with turnips with a higher oven temperature than for carrots, and spreading them out thinly in the pan so they weren't really touching. Took 2 pans and some experimenting, but I was finally able to get a nice crispy exterior and better internal texture on the turnips that way.

Add potatoes, onions, pumpkin (turnips, carrots & garlic). Seasoning & Olive Oil. Cook on stove top, add a little water & par boil, place in oven & cover with foil. Last 20min uncover & roast till golden.👨‍🍳 Kevin + Jacques👨‍🍳Jacques name of French origin. Being a form of the name Jacob, this name means "supplanter"....😂

If you roast a vegetable with a higher water content, go higher temperature, a bit less less time. The key to great carmelized flavor is hot and fast.
Also consider olive oil, rather than butter. Butter is a great finish to your dish but in the oven it a has a low burn point and a lot of water.

I suggest the turnips be cut into smaller pieces or roasted longer until the turn golden and dry out the juices more.

Those look like the same white turnips I grew from Baker Creek seeds. If they are, then I had the same thought about them being too watery. Don't get me wrong, they're excellent turnips, but they were very fibrous raw and super earthy in taste. I might try another type of turnip this upcoming season. Also, I love that you and Jacques show us some ways to use carrots and turnips, besides just eating them raw.

My absolute favorite way to eat turnips is mashed like potatoes, recipe from my Grama and it still reminds me of her:)

Just made tabbouleh with carrot greens. It’s really good! I’d love to see you use the greens somehow. I’m trying soup next.
Pickled turnips are incredible with hummus.

This was hilarious! You guys have a super rapport, which makes these videos so fun to watch. I would like to see more cooking of veggies. I love growing them, but get stumped on different ways to prepare them.

Love the video, great to see the cooking ideas for the fresh picked crop. I grew the same turnips this year and love them . I chop them and some peppers and make hashbrowns for a lower carb option

I think a bit higher temp for the roast to get some caramelization of the sugars in the carrots and turnips to make the flavors more complex. watching you guys makes me super excited for my carrots coming :D

"Contrary to popular belief" and yet you two are like little garden boyfriends. You know, like how people have "work wives/work husbands". It's a serious work relationship, but you two are nice to each other and best friends type deal. It's so lovely.

Love watching this entire process from garden to table. Such a great idea. The roast looks so yummy. I would throw some beef and potatoes in there too and roast until there is color and a bit of charring on the edges. I don't know if I've tried turnips but now I know to cook it that way.
As soon as I get a house, a huge garden and homesteading projects will be the first things I do.

I like purple top turnips. Roast them with oil and seasoning for a long time until they shrink a bit and have some color. So good. Like a cross between a potato and a radish.
