They didn't have all the computer technology of these bikes like holding the throttle wide open, dump the clutch and the computer kept the rear wheel from spinning or flipping the bike when launching. No anti-lock brakes, computer controlled suspension and the list goes on.

The 2 stokes back then where savage monsters that would fuck you up with the slightest mistake plus those bikes back then had up to 200hp (Rossi himself tuned his down to 170 because 200 was too much) weighing only 130kgs and did 200mph. That’s why they where called “the unridables” etc

WSBK imposes RPM limitations based on a percentage of the stock bikes' redline. I believe the limit is somewhere between 103% and 106% so that'd put the top racing spec R1 somewhere near 14,500 to 15,000 rpm off a quick estimate. I think you'd need pneumatic valves to get another 3,000 rpm without valve float.
The irony is that I think it's the sound pilots probably hear, as they wear earplugs and the helmet, so they only get the whiney vibration as you say. It's us who get the best sound of them from outside.
Well, there's a .7 mile straight at Mugello and the Ducati has topped 220mph, albeit with a rolling start, a slight kink and a crest nearing the braking zone. It'd be interesting to see what they could do set up for a 1 mile flat out drag.
