Stir-Fried Bitter Gourd with Egg and Beef Longganisa

  • Ingredients:
    2 pcs bitter gourd (ampalaya), sliced and deseeded
    Salt & water for washing
    3 pcs tomatoes, chopped
    12 pcs skinless beef longganisa, cooked & sliced
    3 pcs fish, seasoned & air-fried
    7 pcs eggs, scrambled
    1 onion, chopped
    4 cloves garlic, minced
    1 tbsp sesame oil
    1 pack ginisa mix (1tbsp)
    ½ tsp MSG (optional)
    Cooking oil spray
    Instructions:
    1. Prep the Bitter Gourd - Wash the sliced bitter gourd in salted water three times to reduce bitterness. Set aside.
    2. Cook the Longganisa - Air-fry at 230°C for 12 minutes, flip, then cook for another 7 minutes. Slice into bite-sized pieces.
    3. Air-Fry the Fish - Pat dry, season with salt & pepper, then air-fry at 230°C for 15 minutes.
    4. Scramble the Eggs - Lightly spray a pan with oil and scramble 7 eggs. Set aside.
    5. Sauté Time! - Add more oil, then fry onions, garlic, and tomatoes until fragrant.
    6. Bring in the Bitter Gourd - Toss in the washed bitter gourd and sauté well.
    7. Combine Everything - Add the scrambled eggs and sliced longganisa. Keep stirring!
    8. Flavor Boost - Drizzle with sesame oil, sprinkle ginisa mix, and a dash of MSG. Stir until well combined.
    9. Plate & Serve Hot - Enjoy the perfect balance of savory, slightly bitter, and umami goodness!
