- Ingredients
1 cup munggo (mung beans), washed
2 bunches alugbati (Malabar spinach), washed and leaves removed
1 large tomato, Chopped
1 thumb-sized ginger, Julliencut
1 onion, chopped
7 cloves garlic, minced
1 beef bouillon cube
1 tbsp fish sauce (or to taste)
6-8 pieces Homemade beef longganisa
Water, as needed
Instructions
1. Cook the Rice
Prepare rice in a separate pot or rice cooker to pair with the munggo and longganisa.
2. Boil the Munggo
In a pot, add the washed munggo and water (about 4 cups). Bring to a boil and simmer until the mung beans are soft, about 30-40 minutes. Check occasionally and add more water if needed.
3.Prepare Aromatics
While waiting for the munggo to cook, prepare the aromatics. Chopped the tomato, slice the ginger, chop the onion, and mince the garlic.
4. Cook the Longganisa
Heat a frying pan and cook the beef longganisa until fully cooked and browned. Remove from the pan and drain on a paper towel. Set aside.
5. Sauté the Aromatics
Using the same pan, sauté the garlic until fragrant. Add the onion, ginger, and tomato. Cook until the tomato softens.
6. Combine with Munggo
Transfer the sautéed aromatics to the pot with the softened munggo. Stir well and bring to a boil.
7. Season the Munggo
Add the beef bouillon cube and season with fish sauce. Adjust the seasoning to taste.
8. Add Alugbati
Add the alugbati (Malabar spinach) leaves to the pot and let them cook for 2-3 minutes.
9. Plate and Serve
Serve the munggo with cooked rice and beef longganisa on the side. Enjoy this hearty Filipino classic!
