QUICK AND EASY GLUTEN\DAIRY FREE BUTTERMILK BROWNIES

    No Whey!
    Welcome to my kitchen! Having dietary restrictions shouldn’t mean missing out. I have been gluten free for 15 years and dairy free for 7 years. I also avoid corn and yeast. We have four beautiful daughters who have each delt with a wide variety of food sensitivities over the years. In addition to no gluten and no dairy we have also avoided eggs, soy, cashews, sugar, carbs and meat. The main lesson I have learned is adaptability. I love cooking and preparing good food for my family and friends. Cooking is chemistry, my goal is to remove the mystery from chemistry! I invite you along to share my food journey to find tasty, safe food that makes you say “No gluten? No whey!”
    “Buttermilk” Brownies
    Mix:
    2 cups basic flour blend
    1 teaspoon xanthan gum
    2 cups sugar
    ½ teaspoon salt
    In a Saucepan:
    1 ½ cups (3 sticks) non-dairy butter
    1 cup water
    3 Tablespoons cocoa powder
    Bring to a boil then add flour mixture and mix until combined.
    In another bowl mix:
    2 eggs
    ¼ cup non-dairy milk
    ¼ cup non-dairy yogurt
    1 teaspoon baking soda
    1 teaspoon vanilla
    Add to chocolate mixture and stir until combined. Pour into a greased cookie sheet with sides. Bake at 350 degrees for 20 minutes.
    In saucepan:
    ½ cup non-dairy butter (1 stick)
    3 Tablespoons cocoa powder
    5 Tablespoons non-dairy milk
    Heat until butter is melted but do not boil. Then add:
    1 pound powder sugar
    1 teaspoon vanilla
    Mix until combined. Pour over warm brownies and carefully spread to edges. Cool until frosting is set.
