And, Dusty hit the nail on the head HUMIDITY is horrendous. The bad news is, this isn't even the worst of it, wait until July, August and September. Be glad you camped in May 😅

I never think to make these kinds of meals camping. It’s just the two of us so I just throw a few burgers on the grill (dinner and fast lunch the next day), or a few pieces of chicken, (again for dinner and for chopped on top of a salad for the next lunch), ribs for dinner and lunch. IF we have steak leftovers, I serve them up with eggs in the morning. Lunch can just be a sandwich! Usually whatever is on the grill (brats and dogs too!) I have a pan of veggies grilling. I use onions and peppers and potatoes by the ton while camping. The way it’s seasoned makes it like a whole different dish. Then there is the summer squash and zucchini, carrots, broccoli and cauliflower with red onion. Mushrooms! Planning our next trip can you tell? But I NEVER think to make these kind of casserole things.!
Brook it isn't the sun but the humidity that makes the heat so much worse than what you're used to. Florida has ocean water along three sides: east, west, and south.
Brooke your right the sun is intense in Florida it’s closer to the equator and it will fry your skin in a short amount of time unless your use to it and it’s very humid also which makes you feel like your suffocating at times , that’s why air conditioning is a must if you live in Florida , I know I’m a native Floridian and lived there until age of 54 when I moved to Ohio to be near my son who moved to Ohio after college ti be near friends he had made in college and for better job possibilities in a big city since we lived in Ocala which was a farming town. Back then but has since grown much larger, all my family still lives in Ocala it’s about 70 miles north of Orlando. Loved your campfire recipes Brooke !! God bless ❤️🙏🙋🏻🌈🌈
Watching you scrap the cast iron with a metal spoon brings back memories of being yelled at by my great grandmother because she thought metal would ruin her cast iron. Ironically inherited her cast iron set.
I love your Campfire Chili. Only thing I would do differently is to rinse the bean cans with a little bit of water to get all the extra flavor out of them. That way it still wouldn’t be very soupy. Everything looked so yummy! And easy! I love cast iron cooking. ❤️

When I first moved to Florida (live back in OH now) I was warned that the sun is "different" there since it's a Peninsula - with water on both coasts - more sun. I do not know if any of that is scientifically accurate, but since my skin is quite fair - I took heed to the warning and sun screened the heck out of myself and my kids all the time. As far as the bugs - my late husband (was an naval aviation technician)said they were so big they had landing gear. lol - looks like you're all having a wonderful time! Thanks so much for sharing!

As I like to remind my aunt in OK they peak at 100-105 and then it starts to cool back down, here in AZ we stay at 110 and at midnight we are lucky if it has cooled down to 100.
FL heat higher humidity from all of the water, went to Coco Beach on Sunday after 2pm. It was sweltering hot and water freezing cold. temperature was still 89 degrees 😂
Dearest Brooke, if you’re still in the Pensacola area of Florida it maybe a bit hotter and humid due to the location your in. It’s basically at the top of the Gulf of Mexico. That’s why the breeze is greater. You alo have 2 very wet humid states above, Mississippi and Alabama and New Orleans. Any place close to the Gulf is Warmer. I lived in Lakeland Florida the very center of the state. I never thought it was that hot there but very humid at times when there was great winds coming from the gulf. The East coast is colder and very damp. The water from the Atlantic is cold, humid and the water is very ruff. Lots of storms on the Atlantic side too 💕🙏🙏
My camper looks very similar to yours. We have an outdoor kitchen. Fridge, stove, counter, sink, cabinets. It’s a game changer. We’ve only had it for about 3 years. We had a pop up before that

I'm from Jacksonville Fl and been living in Yulee/Fernandina Florida since 2007. It's like 30 mins away from Jacksonville. Your boys are so good. And I grew up camping. We always had a not so fancy campers but still nice. Sometimes a tent. I loved a tent more. There was just 4 of us. For a long time we just had a little pull tent trailer that folded out to beds. But was so fun. Plus I was a Girl Scout. My best family memories was just camping out. Looks so good! A family trailer is a good investment. When times was hard we lived in a few. For different reasons. One for just being together. My mom and dad got laid off at separate times. We had got a house in Az but Dad was still in California. So it got too much to drive back and forth every weekend. And he saw us every weekend. I'm now 47. I got a inheritance from my Grandma who was my life. I've been disabled since my 20s. So SSI is so hard to live on. So I took half and got a big 5th wheel. So I always had something over my head. Best decision ever? I'm like a pea on a ballroom in it for 20k I've lived in it over 8 years now. Things planned did not work out. So I found someone $600 to pull me to where I have been for 6 years now! It's costly fixes but I love it. So a camper is always a good investment. For family fun and a back up if the she!t hits the fan.

Can I share one of my family favorite side dish or meal. Use heavy aluminum foil, slice potatoes according to the amount that will be eaten and number of people to feed. Place the slice potatoes in the center of the aluminum foil. Slice some onions, slice up a stick of butter, salt,black pepper and any other spices you like. Place the slice potatoes, onions, butter on top of potatoes and onions, salt and pepper. Fold the aluminum foil to make a sealed eage pocket. Lay on the grill or pull some ash and hot coals to the side and place the aluminum foil pocket on the coals, grill or even ring beside the fire. Take about 30 minutes for them to cook. But it also depends on the number of potatoes, and the choice of how you cook them. You will love it so much you will be cooking them at home in your oven.
I keep trying to write this and it disappears... All your meals for dinner are so great looking and looks like they taste great... I love camp fire cooking ... Yes our sun is a bit different it's the heat and the humidity... The next few days will be hotter high 90's with heat index in triple digits so please y'all be careful if out side and or in the sun make sure you have plenty of water to drink... Hydration is extremely important but now I think about it Dusty is a survivalist so he knows.. silly me .... Be safe ,be happy enjoy and look forward to seeing y'all and videos again... When we camped, I used cast iron over my fire pit. Actually, I do at home over my fire pit as well. Everything tastes better over a fire! ❤
