I tried your recipe... Is the best chocolate muffin so far. Sorry as i adjusted the sugar volume in muffin batter to 80gm as requested by my mom. It still turned out very good and accepted level of sweetness.
Hello. Yeap it can be done but the process takes real long as u got to keep beating it. Yes it’ll be still firm for Asian climates as I always use SMBC for my cakes. They are stable. But ensure your kitchen is not very humid like making it right after cooking. That will cause a little problem 😊

i followed this recipe about two weeks ago, it turned out very well well, the bottoms came off and we had to eat them upside down, but they tasted great
So glad to hear you enjoyed the cupcakes :D sorry to hear the bottoms came off! This could be because the cupcakes were still a little too warm, or perhaps the tin needed a little extra greasing if you weren't using cupcake cases :D hopefully next time they'll stay together!

For anyone interested, I used self-raising flour and used normal chocolate bars (like milky chocolate and some Cadbury milk chocolate), and they still turned out absolutely brilliant. I only reduced the sugar to 100g cause the chocolates I used were sweet. Was skeptical cause of all the tweaks I made. Can’t believe they still turned out so amazing! This is such a good recipe. Hello MK ....this was first Time I saw your channel....made cupcake requested by my kids....this one I mean....did not have chocolate, so did not add in cake (substituted with 1 extra tea Spoon of coffee)....did not have ingredients for buttercream....but still....the cupcakes were the best in taste we ever had❤❤❤❤....I really appreciate your simple and precise instructions...although the worst happened, that first cupcake top layer roze during baking...but on cooling the top layer became flat....to my surprise , even then they were the best cupcakes I ever tasted....moreover like coffee syrup cake...😊❤❤❤❤

Hello 👋 I just baked the cupcakes with no SMBC. The cake’s texture was surprisingly soft and taste was good too. I used butter instead of vegetable oil. I think I poured slightly generous amount of batter into the cup 😅 so it looked like a small mountain🏔 but I love it still! Can I double the recipe if I need more cupcakes? Glad to hear the butter substitute worked well for you :) the oil helps with that extra softness and prevents the cupcakes from drying out, but butter is great too and adds great flavour :D and yes you can totally double the batch, and as long as all the ingredients are doubled that egg smell shouldn't be a problem :)

Hi Cassandra! Welcome to the channel! :D Yes you can omit the coffee powder, but it does deepen the chocolate flavour without tasting like coffee. But yeah if you really don't want it in there then you can take it out :)
Great video! Love your buttercream and piping videos in particular. Have you tried transferring the batter to a measuring cup first before pouring into the cupcake papers?
