Employees are expendable but customers are not. Without customers you won't have any employees.With bad employees you'll lose customers but thats why you can fire them. The customer always comes first.
There must not be any great restaurant in Chicago that isn't run by the grandkids of Greek immigrants. I'm not complaining, actually I'm in awe of their culinary expertise!
