    Technical difficulties are just part of TH-cam, I'm surprised they happen to you though. Your chicken looked so delicious, I know every bite was delicious. Such a cool PBC, hope to see some of those beach cooks. Thanks for sharing😃

      Yep, they do happen, but luckily we normally catch it. I was shooting by myself today, and one of my cameras has started stopping the recording out of the blue for no reason. It's been doing it for a few months now. My son is normally behind the cameras and catches anything like that, and we re-shoot. Oh well, I wasn't going to scrap this video over that last little bit even though it was the money shot lol! Thanks for watching Christy!

    I want to thank you for your vids you are the same age as my dad and we cooked together like you do but I lost him in a tragic accident 2 years ago and it has been real helpful to watch your vids helping me overcome the loss. Now it is time for me to get my kids out there with me and video it that is one thing my dad did not do to look back on.

    I have to say, Louisiana style hot sauce is my favorite. I’ve been making my own lately, playing around with spices, chili’s and super hot peppers. Fun thing to do

    I practically busted a gut when " Tech Difficulities"came up LOL! While Im pretty much a stick burner, I have to admit a PBC makes a lotta sense and I surely wouldnt be against adding on to the arsenal! Thanks again so much Rus,I know that chicken dissappeared PDQ!

      I thought I was gonna have to scrap this video, but I said to myself, heck no, I can still make it work. Talk about bad timing! Right when I pulled the bird out for the money shot, either the camera stopped recording or the SD card didn't capture it. Not sure, but hope it doesn't make a habit out of it lol! Yeah, it's a really nice addition, and especially if you want to go somewhere because of it's portability. What is amazing is, even with it's small size, it can still do 6 racks of ribs at the same time. Not bad at all!

    Hey Rus, Nice cook on the PBJr... the chicken came out juicy as it always does on the PBC. I always thought the original was portable enough, like you said. I'm liking the Jr for smaller cooks and not having to use as much charcoal as the original... Thanks for the video... Chris

    Rus, I've been watching ur videos since 2015 and man I really love ur recipes but I sadly cannot try out the beer/wine type of recipes. All thought it is gonna be good and i'm sure of it. but I can't sadly.
    You see i'm from Dubai(Yep, all the way to the middle east) and sadly beer/wine is not allowed into this country and it's forbidden.
    But so far I've trying your recipes and i'm only 20 years old and I must say your recipes are going to kill me! I try to maintain my Gym schedule but I have to be late cause i'm cooking one of your amazing recipes haha !

    Great idea to use the skewer like the turkey hanger. I've seen alot of folks use them 4 al Pastore taco meat too. Chicken looked great, I'm gonna try your recipe in my pbc.

    Hey Rus, I love your videos so keep putting them out there please. That chicken/turkey lol looked amazing. I've made and sold several of these grill/smokers and they work fantastic. I've done burgers, chicken, meatloaf, pork and beef ribs, pork butts, pork chops, it's all amazing. Keep it up brother.

    20F degrees here in northeastern Vermont lots of snow and a pit barrel cooker may work, or not. I'm relying on my Weber Kettle to get me through the winter. Too funny with you wearing shorts and a T-shirt and me freezing my rocks off here. Great vid Russ and thanks for sharing mate. Cheers!

      It's been getting down to mid 30's at night, but warms up to the mid 60's around noon, and that is just perfect for my liking, but I know we will get colder before it's over with. Thanks, I appreciate it!

    Russ, assuming you can reduce the amount of charcoal in the PBC for shorter cooks (which the company has assured me works fine), is portability the only reason for the PBj?

      They are both portable. I would think the Jr would be great for single guys (ladies) or couples, but if your cooking for a family or more the original is the way to go

      Barrel smokers do really well. I especially like the little one so I can throw it in the truck easily when going on a camping trip, day trip, fishing etc.

    With the pbc's can you shut the air down when you are done to preserve any unburnt charcoal? Charcoal is not cheap.

      They really don't hold much charcoal, but I suppose you could close the bottom vent to restrict the air. I don't do that because once you set the lower vent to your elevation, your suppose to just leave it there. The JR. took one half of the smallest bag that Kingsford charcoal makes, so like I said, they don't use a lot of charcoal.

    Russ how easy is it to kill the fire after your cook on a pit barrel do you just close the bottom vent and it kills the 🔥. Awesome video

      I guess you could do that, but no more charcoal than either one of these use, I just normally let it burn out, and dump it the next day. The Jr. only took one half of the small bag of Kingsford charcoal briquettes

    Looks fantastic. Pit barrel question? They call it a cooker, the chunks of wood and you call it smoked chicken. Names aside, what is the flavor profile with this cooker? More charcoal taste like say maybe a charcoal grill or spit, or more smokey like a wood smoker vertical or offset? I've cooked chicken on an open spit with charcoal/wood, and chicken in a smoker with wood/charcoal and they don't taste the same at all. It's all delicious!! But just wondering if I got one what it'd be like?

      I would say more like using a Weber Grill, and adding wood chunks to the charcoal. Nice smoke flavor, but it could never compete with a wood burning offset. None of them can. But that's my opinion. Just keeping it real here. The beauty of this cooker, is the hanging method with can allow you to cook a lot of racks of ribs at the same time. The larger can do 8 and the smaller can do 6 racks. You will be hard pressed to find any smoker/cooker in this price range that can do that ;)

    Russ, that looked really good, i have a question about the Pit Barrel Cooker, when you hang a rack of ribs, dont they get close to the fire on the bottom of the rack and risk burning? and now a comment on the cook, you probably could have used your injection mix as the binder for your rub being that there was butter in it(i believe this is what also probably made the skin crisp up)( I want to make this soon,my kids love buffalo chicken as do i,, Also Merry Christmas, your friend, Charlie

      You would think they would burn but they don’t. Matter of fact the top of the rack actually cooks a little faster. I always notice the meat pulling away at the top of the rack first. The PBC cooks similar to a convection oven.

    I’m in the market for a PBC. I have limited space and will only be cooking for me and my girlfriend most of the time. Would you recommend the Jr or full size. Looks like you can still fit quite a bit of meats in there. My only issue would be doing a brisket and not being able to fit it on the smaller grate after wrapping it.

      Either pit fits in a small area, so if your doing a brisket, I would go with the larger model

      I normally sear my steaks over hot coals, but you can hang anything you want with these skewers. Lot of uses for them. Thanks, glad you enjoy the videos

    I was sure that the "technical difficulties" would be that you dropped the bird; then had to edit out the cussin' and punting it across the road part. I'm glad that I was wrong. Is there enough room in the Jr. to get two big chickens in it at the same time, and still allow for proper airflow between them?

      LOL, I actually had that happen on a pizza video a long time ago. I pulled the pizza off of the stone, and it slid off of the metal pizza peel, and turned face down into the grass. There were a few choice words when that happened :D Yeah, two chickens would fit in this pit with no problem. I plan on using it in the kinda near future, once we get our sailboat back in the water and able to go to local Islands, and I'll do a lot of different things on those videos, so stay tuned to that.

      I didn't really pay attention to the time. I went by internal temperature of the chicken. I think it was around 2 to 2.5 hours

      Start by cleaning all the mold off with a cleaner and old rags, then load the fire box and fire it up and let it burn until it burns out. That will take care of it.

      I personally wouldn't smoke mullet on a PBC. It runs a bit to hot for my preference for smoking mullet. I like to smoke them in the 225°F range for around 3 hours on indirect heat. There are better options when it comes to smoking mullet.

      This was only a 4 pound chicken. I've done a whole brisket in 5.5 hours. Watch the video. Everything I cook tends to cook faster on the Pit Barrel Cooker. I do ribs in 3.5 hours and it normally takes 4.5 on any of my other smokers, and that is because this does tend to run above the typical "low & Slow" temps that we normally run our other smokers at.

      This one would have fell apart at 3 hours. I always start probing after the initial hour on chicken to get a feel where I'm at.

      Nope, not even close. The bird turned out fantastic. Tech difficulty is exactly what it says. One of my main cameras has recently decided to stop recording right in the middle of shooting a clip. My son normally helps me shoot and catches it, but I had to shoot this one alone, and only knew what happened after I started editing, but I had way to much work into this video to just scrap it.

      I've had the large one for over 4 months, still in great shape. So you know, this is an upgrade from their first covers that they offered. I know the people at PBC, and I'm sure they will replace your cover if it didn't last any longer than that.
