    I can't believe this has so few views. Honestly I feel I could nail this... 1 min per side on a nice heat, and I'm sure like steak there's some caramelisation on the side and you can use that to judge when its just right. I need to get some scallops now lol if I nail it I'll apply immediately

    Do you have to wash hands before using the salt? Since can't the raw scallops have some bacteria on them that could infiltrate the salt that one might use in a fresh veggie dish or something? I'm just curious how the pros do it. Or does wiping it on the cloth get the bacteria off. I was watching intently for the hand washing in between touching the raw meat. If I was in the kitchen I would be overly washing my hands and super careful where I put the spoon not to get it on the board where the scallops were. I'd be freaking out about that and that would be the stressful part lol. But I'm just curious because what if I am overly washing my hands for nothing when I could wipe my "seafood hand" on a tea towel and continue cooking instead of running to the sink all the time? It would save my dry hands from all the washing after touching raw meat. Any suggestions are welcome too!
    Also, when thinking about raw meat and why it even has bacteria, I wonder if humans weren't meant to ingest meat at all if bacteria and parasites live in the flesh of them...are we really meant to corrupt our bodies with meat? I really want to know these answers somehow lol. It just doesn't make sense why God would want us to eat meat if bad things live in the meat to the point we must wash our hands of them...? But then again with veggies and fruit you have to scrub them clean too to prevent parasites. Ahh its all so overwhelming.

      Literally some carnivores can't eat meat that has been in the sun too long because of bacteria and can get sick. They still eat meat.
      And considering these chefs do this daily and no one gets sick, you obviously don't need to clean inbetween. You just don't use that salt for anything else but the scallops and throw any left over after the night is done.
      Pretty common sense honestly.
