Maybe you can use their service to find an video editor that can keep the audio levels constant. So I don't have to adjust the volume everytime you whisper or yell. It's really annoying.

Likely a standard bake, no convection. That being said, convection usually just shortens the time involved.
Traditional North American ovens heat from the bottom, if the top element is on providing radiant heat then that called broiling.
