I thought it was the opposite- an actual raw turkey formed into the shape of a cake (which would presumably then be cooked). But why not make it look like a cooked turkey? Also, I assume this is the sort of thing you would bring to someone else's house, considering how much time it would take away from preparing a meal of one's own.

Yeah, marzipan can be tricky. If you use too much powdered sugar, just wet your hands and knead it in your marzipan for some moisture. For a softer one use a small amount of butter, it really makes the marzipan smooth but easier to stick to any surface. It will stick to your hand at first, knowing from experience, sometimes rubber gloves are a big help.
If you cover something with marzipan, take it out for a few hours from the freezer or refrigerator; the hardened butter cream surface might tears your marzipan. Or just cover it with another layer of unchilled buttercream before doing the deed. ;)
My last tip is: practice, practice and practice and you will get better at it. ;)
Aha as a pastry chef myself marzipan can be hard to work just like modeling chocolate.

Awesome idea! Saw another comment about stuffing but with brownies. This sounds easy and perfect for the look
tonight's big loser blonde brownies would be a good option, too! I think bread pudding works cause it crisps around the edges, but stays moist inside like stuffing, and you could even add dried fruit (like apricot and kiwi) to replicate the veggies you might put in stuffing! I would LOVE to recreate this for a big party some day!

Hi Emmy! I’ve only been watching your videos for about a week now, but I love them! I wanted to suggest making Pan de Yuca for one of your videos. Pan de Yuca is a popular coastal Ecuadorian snack, but it’s also eaten in Colombia. It’s cheesy and chewy and delicious! My mom made it for me when I was little, and I want to see you recreate it!
Pan de Yuca
4 cups of cheese (we used mozzarella)
2 1/2 cups of yuca flour/starch
1 tsp baking powder
Pinch of salt
1 stick of butter, cut into pieces
2 eggs
Preheat the oven to 500°F
1) put the cheese in a food processor and process it until it is very small (like gravel)
2) in a stand mixer, mix the cheese, yuca flour/starch, baking powder, and salt until combined
3) add the butter and eggs, and let mix until a dough forms (it will feel almost like play dough). If it is too dry, add a little bit of milk
4) grease a mini-muffin pan, roll small balls of dough and fill the tin
5) bake for about 5 minutes, or until golden-brown
They are best eaten right out of the oven, and are typically served with a yogurt smoothie. You take a bite of the bread, and then take a sip of the yogurt smoothie.

Hi Emmy, when I looked at the recipe I noticed that the recipe looks like it’s British - in my experience, in the UK there’s two types of marzipan. One type is a little more yellow or golden, like the Odense marzipan we have in the US. The other type is dyed white and as I remember a little more malleable/fondant like - not crumbly the way marzipan here is. I haven’t lived in the UK in awhile but I remember marzipan in general being cheaper there. Also I think the “natural” colored marzipan was tastier, or else I was just put off by the artificial color of the white marzipan. Anyway, I think the trouble you had with the marzipan layer was due to international product differences, not a lack of skill! Thanks for the video :)
You might be thinking of marzipan vs almond paste -- almond paste is a darker color and a bit less sweet (more almonds/less sugar).
@@RebekahAmberClark almond paste can't really be used to drape over a cake, it's coarser because it has more almond content. it's more often used as filling or for molding/sculpting decorations. for instance odense marzipan is 28% almond while their almond paste is 45%. what makes marzipan more malleable are the additives and stabilizers which can vary from brand to brand. i like renshaw for covering cakes because i can roll it pretty thin.
@Robin Macy there are 2 colors to marzipan, white and golden. their consistency is the same, but if you wanted to add color dyes then you'd pick white obviously.
You really have the Odense brand in the US? It’s a Danish brand (and Odense is the city where the factory was founded) I somehow thought it only was sold here in Denmark still.

I found this delightfully soothing. I'm recovering from a harsh & challenging time yesterday and hearing Emmy's gentle cheerful voice patiently & thoroughly describing what sounded like 15 hours of effort was a balm to my mind & existence.
Even though it was a *very* real-looking (raw Turkey) cake, this morning, the raw didn't matter. I just relaxed & listened to Emmy & felt better.
