The deepslate roof sounds good, plus your house wouldn't burn from lightning strike. ⚡
A shield might be handy.
And dig a couple blocks around the diamonds in case of lava underneath at that level.

maybe try to sprint jump more and in flat surfaces you can just run through mobs use your shift key

I cook all my meat on a campfire. It may be more time consuming, but it only costs the coal to make the fire. You can cook while building other things. I also put a slab over the fire (two blocks next to it, and the slab attacued to the bottom of the upper block) to prevent passive mobs or myself from getting burned by the fire while collecting my food.
I've heard people talk highly of campfires, so I definitely would like to check them out! Thank you very much for the helpful insight! :D

You should make a shield to protect yourself from the mobs ( the skeletons won't be a problem anymore :D )
