The video could have been better if it had outlined what elements can and cannot be saved with the workspace definition. I was surprised that the viewport layout apparently doesn't save.
I'm having a problem at the moment where I can't dock panels into my workspace, even though I previously could, and in fact had them docked until I wanted to move them. Anyone know why this is, or how to fix it?

Did you lock it by mistake? (the icon in the top right corner)
I'm working in Maya 2016 right now, so I don't believe that icon is there.
Try reverting the workspace by going to Windows > Workspaces > Reset and then see if you can build the UI again. If anything, this sounds like a bug.

Keeping in mind how many UI bugs has maya 2017 right now.. i dont even bother to make customized workspaces. Its a waste of time.
