Classes are not the same as variables. Using utility classes could be very similar. Classes, I find useful for styling things that cannot be styled with block settings. With variables, I find it easier to see what's happening. Anyway, I would use exactly these variables within the class definitions. Preferably using variables from Core Framework or CSS.
I think this may be the trick I was looking for as I wanted to have the H1 and a few design elements to be the colour I chose for each category. Instead of grabbing the hex for each blog post I can just set up variables called the category. This will be a big time saver.

Yes, you need to enqueue the CSS into the editor. It doesn't bring in 100% of things... but it will bring in most. Here's the code you need: generatetweaks.ogal.dev/enqueue-styles-into-editor/

Hey there as always nice content, just let me comment something which is my thoughts and mistakes I notice on products as Generatepress Generateblocks and Kadence etc. They provide the same product in each update, what I mean by that is that they dont provide something more than creating a page with more modern way. What GB is providing is nothing more than what you can do with CSS years now or better to say with Gutenberg with each new feature they add. What Tom actually is providing is, to add paddings margins and containers, if you analyze it in more depth. What Tom is missing and is really disappointing is that does not consider to go in more advance things as ACF ( in depth) CPTS and Woocommerce, modern templates and layouts. There are a million ways to create a page those days, without or with bloat, I really believe this product will fade very fast in the near future and this is because Tom does not consider to go more "risky". He follows a pattern that was successful with Generatepress, but things have changed, there are many products out there better in many terms. This is my opinion of course and does not mean that I am right, future will test their product, of course GB is a nice product but misses critical things.
