I usually balance out at one Wild Card and 2 extras/player.
Or one Wild Card and 1 Extra/player with a dramatic task during the combat
If i want to make either more dangerous I add in a second wild card or include a second wave of Extras at a fun point during the fight.

Great video and insight, I just ran my first game in Deadlands a month ago for my buddies (first time for all of us) it was a great time.
Was nervous making my own scenario but it all worked out....fun had by all a win !!
