One thing that's really easy to both see and miss about Azula is that everything about her is perfectly calculated. Nothing about her or her appearance is there or happens by accident. We can see that she has long nails and as we saw in this episode she is willing to use those nails as weapons in combat, which implies that that is the entire reason why she chose to have long nails in the first place. Yes, she cares about looking good / perfect but she cares more about how can I make myself into as daily a weapon as possible?
Also in some cultures the top knots are a symbol of nobility, so cutting off the top knot is like saying your are cutting yourself away from your heritage.

The craziest thing about Azula is that she is only 14 years old. I don't know any 14-year-old who is trying to get world domination and wants to kill people including her brother. A real kids show about a 14-year-old mass murder psychopath. We don't literally see her kill anyone but if we look at the total picture and the fact she threatened the captain without problems I think it's save to assume she has done some murder.
