    Great tips! Dry beans are so cheap and easy to prepare and once you discover all the wonderful recipes you can make with them you wonder why you didn't start using them sooner.

    I love this series. Thx for all the tricks. Here's my list of kitchen problems I'd like to be solved by Thomas. I know you have the answers :)
    1. How to preserve garlic, ginger, shallots, green onions so that they don't germinate / get soft
    2. How to cake care and cook in my Cast enamel dutch oven (temperature, how to avoid food to stick, cleaning, storing tricks)
    3. How to make the perfect dumb proof Crème Caramel or crème brulée
    4. How to clean a cutting board, disinfect, wash, store
    5. How to sharpen a knife
    6. How to thicken a sauce (different methods)
    7. Is there a way to save a meal with too much salt
    8. Ways to make sure ground beef, pork or veal don't boil in the pan but sear
    9. How to make chicken fried rice (this one may sound stupid but mine always end up being mushy and not fried)
    10. How to keep lemons and limes for a long time in the fridge.

    Would you use aromatics if you were storing the beans? I have heard you don't want to add flavor if it will be stored because they will spoil? The seasonings is for when eating right away.

    What about adding salt? I've heard it's best not to salt until after cooking. Is that correct?

    Why would you throw that water? all the flavor is in there! I f you're gonna pre soak them, save the water and on it add the rest. All that brown water is all the vitamins and flavor of the beans. Mexican here knows :C

      Throw it out to get rid of any dirt, tiny stones, possible chemical residue etc. It's your choice but I always toss it.

    I like beans In with my porridge. I thought If the Koreans can make a red bean Ice cream what can I do with beans to get protean. Been vegatarin It has been great for extra protean. Get use to It by adding jam to the porridge. It Is yum yum after a while.

    I would never boil or cook my beans to hydrate them, all their flavours will be drained off

    Soak the beans until doubled in size then throw them in a rice cooker with enough water to come to your first knuckle like you should do with rice. Add any aromatics and definitely a bay leaf. Easy!

    What's gained by using dried beans over canned? Is it just price or are there other factors that cause people to go for dried beans?

      many brands of canned beans have sodium - a LOT of it - added. You can rinse the beans and get rid of some of the sodium, but dried will always be preferable in that context.

      And now days a lot of stores are selling canned beans with "no salt added." I'm sure it still has sodium but much, much less so it should be fine (and much less of a hassle)

    I use a bean recipe book and found out you have to vigorously boil dried kidney beans for at least 10 min. or they become toxic.

    Just cook them in a pressure cooker, Takes an hour at most, women in my family have been using this metod for generations (my mom, grandma, aunts...)

    You should always do at least a few rinses of your beans before tossing them into the pot. You just took them out of the dirty water without rinsing them.

    How do you use beans in a vegetarian type diet? Do you eat it alone? Do you add rice to it? Do you add it to a salad? Do you eat it in a soup? How do you make a meal out of beans?

      Leonard Mayer beans paired with cooked rice is a complete meal in almost every cuisine I can think of- Mexican (indeed all of Latin America), Indian, Greek, Lebanese, Korean etc. There are different ways of making beans. Almost all use aromatics like onions garlic pepper for flavor and maybe a stock to boil in, I’d recommend using a pressure cooker for efficient cooking. You could also pair beans with bread- pita, naan, tortilla, enchiladas etc

    There is no need to soak beans. Just sort, rinse, and stew for 2-3 hours.

      They will cook fine with out soaking. But I always soak them to cut cooking time, which saves some money on the energy used to cook them whether you have electric or gas. Never used pressure cookers but I bet they can conserve energy too.

    this process is too long. I always rinse it, and then cook it in pressure cooker for 30 minute juts with water.

    have soaked beans as long as 2 days and boiled the hell out of them & wound up still mealy... they're a waste of time, as far as I'm concerned. made split pea soup recently & should have just thrown it over the fence...

    I absolutely hate American chili (ground beef and beans). I would have simply written that I hate chili, except that I really like some of the more mexican styles chilis, which have a lot of green chili pepper in them, no beans, and maybe some cubed pork.
