I should really get around to making a tutorial video for this, but here's the written version: You can't change an existing hireling's name, or at least I don't know how. What I do instead is I edit the list of names and cycle through people untill I get the right name with the right class (and secondary skill). To do that, I open the Assembly-CSharp.ddl using a program called dnSpy. From there, I find the entry in the "assembly explorer" labelled "Squad_Hireling" Finally, at the bottom of that I find the name lists and right click the names and do "edit method" Add the names you want, then delete most of the others (those commas are important, by the way) Hit the compile button. Finally, click on File in the top right and "save all" in order to save your changes. I'll also mention that the game has a mechanic where it'll randomly garble (add/remove/change the letters of) names, too. If you want to more or less turn that off, just look for the "GarbleName" entry under "Squad_Hireling" and change the 2 in "while (inGarble > 0f && inName.Length > 2)" into a high number like 40, so it'll only garble names with more than 40 letters. Then compile and save-all to keep the changes.

You unlock more as you progress. When you start, you can bring a single friend. After recruiting Chef Pava, you can bring three. Once you've got Crackpot (referred to as Fence in arena mode) outside your HQ, you can bring five Hirelings along with you.
If you get close to the railing in that room the camera pans down to show you some minion guys tending to the weapons. There is one less of them in the world now.
