Thanks so much for this recipe! I made it twice in my Instant Pot and it turned out amazing both times. I used green lentils the first time, the second time I was all out so I used 1 cup of yellow split peas, with red curry paste instead of green and it was super delicious too. I will definitely be making this again!
Looks great! I might want to peel the eggplant because I find I don’t like the skin. Japanese eggplant 🍆 is more delicate and can use the skin but a bit harder to find. Thanks going to try this.
I have every single ingredient in the fridge minus the eggplant; Im definitely going to make this shortly to break my fast. Whole Foods had a great deal on greens this week so although I have the purple kale, I think I’m going to use the chard I bought. You are so the queen of cozy soups. They all look so delicious!
Simply Quinoa it is fantastic!! Just made me a bowl. I realized I only had black lentils but it worked because it turned the dish a deep green color that made the red chard stems, white cauliflower and orange sweet potato pop (gota get that IG photo, 😂). Thanks again 😊!!
