    i'm making a version of this right now, substituting a few things i don't have. was gifted about 2.5kg of tripe, have a few heads of cabbage.
    i used beans in stead of sprouts, onion instead of garlic, and a tomato for spice/flavor with a small handful of almonds added for flavor also.
    making it in a pressure cooker using much experience and another chef's recommendation, 18 mins for tripe.
    thank you very much for the inspiration, much appreciated, especially as i have so much tripe and cabbage right now. !! :)

    Does your tripe get throughly cooked? In my experience, I have to boil the tripe in a slow cooker overnight to make it comfortably chewable.

      In this video I've used small intestine, so I didn't have to do pre-boiling. As you mention, other hard part may be boiled long time to be chewable and less odor

    What cut of beef intestines is this? Large intestine of beef?

      Both large and small one can be used. In this video, I've used small one

    So U put chinese chives into a japanese soup :-). Gonna try this a lot for this winter in Romania.
