- This classic Italian Chicken Milanese is perfect for entertaining guests or as a simple weeknight meal. Chicken cutlets coated in panko and pan-fried until golden brown, it is so easy to make this restaurant-quality meal at home. Served with a fresh arugula salad tossed together in seconds, this will be your new favorite chicken dinner. I love finishing mine with a squeeze of lemon juice but it's delicious with all types of sauces.

Lovely traditional recipe. My Nonna seasoned the bread crumbs with Parmesan, lemon zest and parsley. She also make lemon scented bruschetta and topped it with the bread crumb mixture that she set aside before dredging the chicken in the crumbs. Italians must have crusty Italian bread, crisp salad and wine with this lovely meal. Great job. Nonna would like!
I totally thought about putting in parmesan but the lemon zest is a great idea, I may have to copy your Nonna.
I love making this for an easy meal. Quick suggestion: After dredging the chicken in the flour, I let it stand for ten minutes until the flour starts to change color before dipping in the eggs. This helps the breading to stick.

Here in Argentina we make these all the time, some versions I love are "milanesas napolitanas" and "al caballo," they're even more delicous, and you eat them with fries or mash potatoes (generally) :)

We eat them the same way in Venezuela, my nonna used to make it all the time.
Great ideas. I make a similar recipe with the chicken, but instead of bread crumbs I use cornmeal, then I add the grated parmesan, black pepper, and a pinch of cayenne to the cornmeal. You can barbecue the chicken to save on calories. My topping is arugula, tomatoes, capers, lemon juice and a smidge of olive oil. So yummy. I am not an arugula fan, but I love this. I just to pound my chicken with a rubber mallet before they made these fancy hammers. My friend who is a doctor said to never cook in olive oil. Smoke point is around 320 degrees F. I now use avocado oil.
Milanesa Napolitana is my very favorite food and now the perfect video to make it perfectly, great job John.
I always enjoy the meals and desserts you make. in this particular case, I can’t help think we’re missing a lot of seasoning. Being Latina, I was always taught to season the bread crumbs for some extra flavor.
This is a super-adjustable recipe, you can add so many different spices to you preference :)

Hi, John, from Argentina! Here they are so common that you could buy these ready to fry in every butcher's! I think the average family has chicken Milanese 3/4 times a week, lol. At home I make mine in the oven, and my husband's pan fried. But if you have them at a restaurant, they will be deep fried and that's the most delicious way! Many children's favorite meal is chicken Milanese with buttered noodles, 😂😂😂 you should let George and Lachlan have that on a movie night 💖

This is one of my favorite weeknight meals! We make a mass batch of cutlets to freeze so we can make this even faster on those hectic weeknights
We add paprika, garlic powder, pepper , cumin , salt and parsley to the flour so when you deep the chicken the seasoning sticks to it and flavors the bread crumbs 👌🏻

We had this tonight for dinner. What a coincidence! But we had ours with Parmesan red potatoes and corn. Our family's favorite meal. We learned to cut the chicken in half and pound it thin from you from another recipe. What a game changer! Thank you so much!
Something I found helpful is to put the freshly breaded chicken in the refrigerator for 15 to 20 minutes. It helps the crust to dry and adhere to the chicken. If you can do it on a cooling rack in a sheet pan so you get air circulation, that would be even better.

I love your videos John, however there are many other seasonings you can use on chicken to give it more flavor. Try researching some Caribbean recipes we use sometimes 10 or more seasonings and a homemade green seasoning that will blow your mind

Try and add a bit of parmesan into the breadcrumbs, it makes a big difference. Also, as Nigella Lawson says, keep one hand dry and one wet when breading so the ingredients won't stick to your fingers and be wasted.

Great recipe. Great demo. Thanks for sharing. After 60+ years of cooking, I've recently discovered the "jaccard" SSteel bbq pigtail for dredging and breading meats. It eliminates mitten hand in the egg dip and keeps fingers or tongs from flaking breading off when going into the oil.

Try mixing Italian seasoned bread crumbs with the panko.... yummy! This is a staple in my house. I grew up with them (mom was Argentine, dad was Italian and was raised in Argentina). It's my favorite meal ever!

My nonna did this the same way. I throw in a few Italian herbs to give more flavour and my family prefer it this way, and do the same with veal.
