- In this video, I show you how to make the best Italian Rainbow Cookie in cake form! This also doubles as a very easy seven layer cookie recipe. If you're making the cookie, just cut the ingredients and baking time in half.

480 g All purpose flour
400 g granulated sugar
8 large eggs, separated
680 g almond paste
452 g unsalted Grade A butter, room temperature
2 tsp almond extract
2 tsp red gel food coloring
2 tsp green gel food coloring

30 g whole milk
21 g unsalted Grade A butter

for sure! Just make sure that it’s smooth and spreadable like a chocolate spread, cookie butter, nut butter, or other jam.
I just don't recommend using preserves which contain fruit chunks or anything that is seeded raspberry jam.

She used 8 inch square pans. You can also buy diposible pans in the dollars store and yes you can reuse them too.
