I NEVER thought I’d have the means to get a KitchenAid...besides, I’m a city girl & I enjoyed eating out (in my 20’-50’s). With the passing of my mother-in-law I found I was the ONLY one who didn’t already have a KitchenAid so I inherited hers. Game changer. I use it a LOT. Not at first, however (too scared...think I made a boxed cake as a first try). Now? Use it several times a week, eating MUCH healthier, feel better actually as my food is fresher and even organic things now. It DOES make a difference! Who knew? Even going plant based (something I’d not thought was possible).

This look delicious Cher. I was thinking to replace the fat content which heavy and whipping cream has maybe try adding coconut milk? Coconut milk is very thick and has quite a bit of fat content but before adding you may have to strain it as some brands have bits of coconut in them. This is perfect for me as I'm lactose intolerant. I will definitely try this recipe. Thanks again for sharing :-)

You might want to try adding a bit of Ultra Gel thickener to the mixture before putting it in the ice cream maker. Ultra Gel is a plant based thickening agent that works with both hot and cold items. It’s mainly for making jelly or mousse but will thicken soups and stews without breaking down after it cools like corn starch does.
It might improve the texture of the finished product by binding to the water crystals and making it smoother like the cream does in regular dairy ice cream.
I actually add it to my gluten free baking to retain moisture.
Another thing you could use is xanthan gum which is another thickening/binding agent but some people can’t tolerate it. Many manufacturers use xanthan gum in their products, a few examples you’ll find it in are ice cream and Cool Whip, salad dressings, sauces etc.

I use gelatin to keep ice crystals from forming in my own ice cream and frozen desserts. It wouldn't be classified as vegan but it could help. I never tried agar-agar but the same principle may apply.

I use arrowroot starch in my icecream, works great and gives a lovely, smooth mouthfeel (where e.g, tapioca leaves residue on the spoon, this leaves none). Never heard of Ultra Gel... 😊

A Kitchenaid mixer is truly an investment. After wearing out another stand mixer I bought a Kitchen aid and have had it for about thirty years. Now that I am gluten-free it has been a lifesaver. I don't think I will ever need to buy another. Wish that I had bought an ice cream maker as well since I have difficulty with dairy.

Thank you for this video! I just bought the ice cream attachment for the kitchen aid. I'm working on clearing enough space in my freezer for the bowl!... I'm so happy to see that you don't need to cook the mixture first, I really don't understand that. I thought maybe I would be stuck making only sorbets til I found your video... I've been vegan a long time and am sick of ice creams from the store that have tons of unnecessary added unhealthy ingredients. I am going to use Chocolate Oatly milk first and see how it works out 😊❤️

You could try to add 1 banana. I tried 100% frozen banana ice cream and its very creamy. Maybe just mashing a ripe banana would add the creaminess as the machine is churning. Banana mash is so soft that the churning would be enough to fully smooth the mix as the ice cream is forming.

I have had it for over 10 years and never had a problem with it!
