Buckeye Recipe! Chocolate Dipped Peanut Butter Balls without Shortening!

  • Learn how to make this easy buckeye recipe! These chocolate dipped peanut butter balls look like a buckeye nut with the lighter brown peeking out from the dark chocolate. My version of peanut butter buckeyes is made without shortening, and I even have a lower sugar version!

    INGREDIENTS
    *Traditional Version*
    1 cup peanut butter
    1/2 cup softened salted butter
    2 cups powdered sugar
    3/4 teaspoon vanilla extract
    1 3/4 cups chocolate chips
    *Less Sweet Version*
    Same as traditional version, except reduce the powdered sugar to 1 1/2 cups and add 3/4 cup collagen peptides. You may need to chill the dough for an hour or so before rolling.

    You can use a nice smooth vanilla protein powder instead of collagen peptides and maybe get a better result with less sugar. Great videos.

      Thank you for the suggestion! I only have experience with protein powders that aren't smooth - do you have a brand suggestion for one that isn't gritty?

    I will try your recipe .. for some reason with mine, the toothpicks kept falling out and creating a big mess

      Aw, that's frustrating! Perhaps the dough could have been chilled more? Or it could have used more powder sugar?
