Sauce brings moisture so if you really want it to be crispy like chips, I’d probably remove it (it comes off easily) after cooking the fish and before putting back to the sauce. You can further crisping by putting in the oven toaster etc… I love crispy skin too, but I’d cook different dish (like salted salmon, recipe on my website).
I tried this, it was pretty tasty but to be honest the amount of butter and sugar made it more like a dessert - I think I need to find a rather lighter version to cook on a regular basis or my heart and waistline are going to suffer badly.
