Cream or no cream in fettuccine Alfredo sauce, egg or no egg in the pasta... i hope you show more of your home made pasta recipes with this machine because i got the same machine and this motivates and inspires me to use it more ❤
You need it for Alfredo... It's a cream based sauce. Without that it becomes closer to a scampi sauce (which is delicious). You're right though... It's got tons of fat and calories that way... the scampi also, for that matter. If the calories and fat are an issue, I'd try to avoid all this kind of stuff anyways, however.... It's how I got all my initial weight gain.
@JoesPhenomenal I'm sorry, but you do not ( I mean you can if you want to of course but it's not authentic Alfredo) If made correctly, butter startchy water and cheese is all you need to make a creamy, "authentic" Alfredo sauce.
You know.. I stand corrected... Looked into it and I didn't realize that the cream portion was an americanized variation on it... The sad thing is that is how I was taught originally to do it, so I just never questioned it. Learn something new every day! Thanks for the insight.
Thats what i learnt @JoesPhenomenal when my sister taught me no cream for carbonara just beaten egg, grated parmigiano and dash of pasta water and seasoning is all you need.
AP flour doesn't require a binder like a lot of other flour types do... at least not in that Philips machine. When I make it from scratch with my Kitchenaid Mixer, I've always used the egg in there though.

Why are you using heavy cream or any cream? The butter, cheese, and pasta water make the sauce. Cream is unnecessary fat and calories.

That is American fettuccine Alfredo. I don’t know where you’re from. I know Italy is just pasta water, butter and Parmesan.

How do you make pasta without an egg? Or some extra virgin olive oil? Some sort of fat? You know, a binder? Ugh!

00 zero flour and water is all you need. That is what store bought dry pasta is made of. However, egg and semolina are what I prefer.
