Perfection in a Pasta Salad

- If you are wanting a meal in a salad, this is it..It has all your veggies and protein that you would want…It is so versatile in that you can add what you have and like and you can change up the dressings and make it different every time…Please try this..You won’t be disappointed

Recipe
3 cups cooked gluten free pasta..I used rotini…cook according to package directions
1 cup chopped ham
1 cup chopped broccoli
1/2 cup finely diced onions…preferably red
1/3 cup grated carrots
1/3 cup finely diced cucumber
1/3 cup yellow sweet pepper
1/2 teaspoon garlic powder
1/3 cup green pea1/3 cup finely diced celery
1/4 cup finely chopped purple cabbage…optional
1 cup finely diced tomatoes
1 cup grated cheese…your choice…I used pepper jack and Monterey Jack
Mix all ingredients together in a large bowl…
Stir in dressing ..below..
Gramma Roses Red Wine Vinegar Dressing
1 cup mayo
1/4 cup (no sugar added) ketchup
4 tablespoons red wine vinegar
1 teaspoon stevia
Whisk together and pour over salad ..
A cup serving of this posta mix is low glycemic load of 11. The three cups of rice posta is about GL 90 total for this whole bowl full. Divide 90 by the total of 11 cups of food in this bowl and the carb load is about GL 11 or 12 per cup of the mix. Low GL is 10. Medium is 11 to 19. High GL is 20 or above. GL is effected by the total mixture. Almost all the GL carbs in this dish are in the posta... rose diluted the carb load by adding all the other ingredients. Taking out one cup of posta would also reduce the GL of the mixture.

There is still a large amount of carbs in the brown rice pasta. It's like 43 carbs for just a half of a cup, even when you subtract the fiber content which is only two. That's very high carb. You can find low carb pastas if you search for them.
Yes, there are a lot of carbs, and for me and Roy, We try to get a low carb pasta …Some of my viewers are gluten free and not low carb, so I try to make recipes for all my audience. Roy and I love Hearts of Palm..I have done several recipes using that..It is very low low carb…I always really appreciate your comments..I love it when my viewers interact with me..Makes it seem more personal 🌹

It was so good Barbara. I got my chopping mats from pampered chef.. 3 come in order. I love them..I have a wooden one, but I use these all the time because I can put them in the dishwasher or just wash them in hot soapy water with a little bleach in it. They are wonderful 🌹
