She told me her mother taught her that the quickest way to a man's heart is through his stomach. I'm not someone who celebrates valentine's day. I think it's ridiculous, as does my wife. Instead, I randomly throughout the year bring home flowers for a better surprise factor. Good recipes for me, and my son, my wife is vegan/vegetarian. So none will work to win her over. Luckily I have already done that 20 years ago. Lol Hope everyone is staying safe and taking care.
You could also cook the parsnips in cream for a really nice flavor, and when you strain it you also have a parsnip cream you could use for other dishes

(I wasn't actually apart of the competition because I just finished and will be leaving next week) but the testers and my classmates loved it, they were so happy I was not actually in the competition.

Lovely recipes, I always wonder how to get everything ready so that the whole dish is hot. I often find that when I rest various meats the temperature drop is really quite a lot. It would be nice to see everything coming together at exactly the same time. You also said the first two recipes are more appetisers, but while I could imagine (for myself) eating a fair amount of chicken, and still have room...I suspect a date would not have that capacity. If being 'flash', I would say a light soup, chicken dish (but how much for a nice looking 2nd course?), then beef, then a pudding/dessert, and possibly a cheeseboard.
Simple rule. Don't ever try out new recipes when there's a lot on the line. Cook any new dishes you haven't made before for friends and family AT LEAST ONCE...before serving the dishes under big pretenses.

The grain of a chicken breast is the opposite of how you cut it. It's feels wrong to cut it that way but that's just because it's how we grew up doing it.
I think steaks a risky one because you don’t know if your date appreciates a cut like the filet or know what their preferred doneness is, I feel like many people are particular about their steaks.
There is this thing called ASKING what kind they like... if they are coming to your home for a home cooked meal, you have probably had some time to have a few conversations!
