    Dr. Katz has one of the most grounded, all encompassing presentations that is so important in this ever evolving movement towards sane food choices. I love the middle ground and respecting everyone in the place they are at. At the same time opinions are based on solid science. His approach is gold!

    I worked on an airplane for many years. I would cringe when kids were given apple juice or diet soda, rarely water, or they asked for chocolate milk. Lately more young kids are asking for coffee? The parents order snack boxes for kids which are filled with vending machine fare. The snack for 80% of the diet coke drinking adults was a very sweet cookie. Tomato juice is incredibly popular along with a salted snack. Salt em up Scotty. It was an interesting place to study eating habits.

    What a great interview. Dr Katz was so good at stating his points so we could understand. I will try to be better to say to people i talk to eat more plants.

    I am a member of the 2.4% of Americans who are a healthy weight because of healthy diet and lifestyle habits (Whole Plants Vegan Nutritarian SOS Free) and I live in Section 8 government subsidized housing surrounded by the disadvantaged, ignorant, chronically ill, and dying prematurely. I wish I could help my community because the self harming behaviors of sick people also harm others. Their cross addictions to processed foods makes them vulnerable to drug addiction and drug dealers, petty crime, shoplifting and selling stolen goods, sex trafficking, punishing anyone who won’t get on board. The corollary of First Do No Harm to self or others is that Self Harmers will Harm Others.

    Hi Chef AJ,
    Thank you for your good work. While I think what Dr. Katz is proposing would be an improvement for many, he showed he doesn’t really understand or respect veganism when he said “I am mostly vegan” and that he occasionally eats eggs and fish. He’s “plant-based” as veganism requires a commitment to non-violence. I am surprised he isn’t clear on this distinction.

    Yes, it would be easy for the food supply chain to change to real food, that SHOULD be great for farmers and the future of farming, the ecosystem and human health, HOWEVER the food "industry" NEED to process a lot to claim "ADDED VALUE" (ironically truthful if you realise the added value is to them, not the consumer). Unprocessed effectively means just selling the fresh fruit and vegetables without synthetic chemical contamination - well that doesn't need processing beyond a wee bit of packaging.... So a whole processing industry is no longer required... Of course there are more socially responsible activities for these ppl to engage in, but it'll be quite a shock to the system... Anyway as far as I'm concerned bring it on - I'd love to have a wider range of organic fruit and vegetables in my local shops. I just notice that since I only shop in about 20% of the food aisles in any shop, that's a big change...

    Really interesting..... I wonder what the benefits of that component in virgin olive oil are.... he didn’t really tell us that. A different perspective from Dr Esselstyn for sure...they both come from different corners I think...heart health and general longevity...

      For healthy people who use reasonable amounts, oil may not be an issue... some of the "Blue zones" use EVOO... but they also eat an overall healthy diet. In the US with our already SAD way of eating, resultant rampant disease and obesity, it could be the straw that breaks the camel's back. I agree with doctor Katz... it's all relative... for prevention crowd out the less desirable (processed junk including oil, animal products, etc.) with more whole plant foods, but if you already have health issues you need to treat and reverse, you need to be much more vigilant. Plus some of us just do better if we avoid problematic foods altogether instead of trying to ration them. I was a T2 diabetic until I cut out all oil, so I just avoid it period, cuz... "if it's in my house it's in my mouth!"

      If it is a trigger food for you... then by all means, avoid it! I treat it as a condiment and randomly drizzle it modestly over vegetables, or pasta, or soups. Why? Because HIGH quality, (single country origin) EVOO has an ancient history and is a beautiful product ❤️.... I’m definitely a WFPB eater, but not adverse to a sprinkle of Celtic sea salt and a drizzle of olive oil. Btw, Greek is my favorite! As a side note, I rarely struggle with a weight problem of more than a few pounds, and happily avoid all processed food !

Google or do a TH-cam search and a wealth of information from this guy will pop up. He speaks without agenda or ego. Quite unusual!

      I’ll assume his stance on masks agrees with the science that shows masks….especially N95s….are highly effective in reducing the spread of COVID-19.

    Dr. Katz is a smart guy and quite sesquipedalian! Well done AJ. Maybe the next time you speak with Dr. Caldwell (no oil) Esselstyn and Dr. Greger, consider asking them if they agree with Dr. Katz "wholesome foods, sensible assemblies" as it pertains to incorporating oleocanthal-rich olive oils into our diet. Dr Katz led me to find studies that conclude oleocanthal sharply reduces cancer cell viability. That's certainly worth exploring.

    You ask where the outrage is. Most people don’t have the knowledge you have. People are unfortunately not knowledgeable enough and need to be educated. The issue is getting this knowledge out to everyone. People are more worried about catching COVID. Maybe the experts need to approach this with the Urgency like COVID testing. People are afraid that they will be attacked and aren’t willing to put there livelihoods in jeopardy. Too much corruption.

    Chef A.J. I order you two books Friday nu Amazon.nl. Tomorrow the books will arrive. I 'm trying now to be without oil. Dr. Mindy Pelz is promoting good and bad oils on her Canal on TH-cam, Facebook and Instagram. It give my the oils joint pains. So from today I stop whith oils.
