Foam board laminated with epoxy and fiberglass is some pretty strong stuff. If I was going to build something like that, I would use that.

I'd be concerned about the amount of weight of drinks, ice, etc. I think you could easily exceed the safe cargo capacity of your vehicle. I think it would also be hard to make it watertight, because any leaks might lead to rust issues. It's an interesting idea, but well beyond my expertise to advise you. Best of luck!
