    Pastry Recipe
    2 cups flour
    1/4 cup butter for lining the tins.
    ----------
    Recipe for filling
    2 cups ricotta cheese
    1-1/4 cups sugar
    4 egg yolks
    1/4 tsp salt
    1/4 cup butter
    1/2 tsp cinnamon
    ---
    Pastry shell
    1. Line the tartans with butter. Put 2 cups of flour in a bowl and dip the buttered tins in the flour. Shake off the excess.
    2. Spray all the buttered and floured tins with water. Dip the tins in the flour for a second time; shake off the excess flour and spray with water. Repeat 3 more times.
    For the filling: Pre-heat the oven to 350 F.
    1. In a blow mix the eggs, sugar, flour, salt and cinnamon together. After blended, mix in the ricotta cheese and mix well.
    2. Place in the oven for 20-30 minutes. Until it reach and internal temperature of 175 F. or until golden and set firm.
    3. Let cool for about 15 minutes.
    4. Next. Tap the side of the tarts on a cutting board to release the pastry.
    5. Dust the top with powdered sugar.
    Alternatives: other variations I have tried is to substitute half the ricotta cheese with cottage cheese or goat cheese they are all delicious.
