  • Jamaican Filet-O-Fish
    2 Cod Fillets
    2 Bread Buns
    4 Slices of Cheese
    Sauce
    .25 tsp Fresh Thyme
    1 tsp Spring onions finely chopped
    2 tsp Gherkins Chopped
    4 tbsp Mayonnaise
    1 tsp Hot Sauce
    Batter
    1 tsp Curry Powder
    0.5 tsp Allspice Powder
    1 tsp All Purpose Seasoning
    1 tsp Paprika
    1 tsp Garlic Powder
    0.5 tsp Dry Jerk Seasoning
    1 tsp Fish Seasoning
    5 tbsp Self Raising Flour
    2 tsp Cornflour Flour
    1 Bottle Dragon Stout or Guinness Chilled.
    To make the sauce add all the sauce ingredients to a bowl and mix until combined.
    Add all the batter ingredients to a bowl apart from the dragon stout and mix until well combined.
    Wash the fish in lemon juice, rinse and then pat dry. Cut the fillets into a square shape about the size of your bread buns. Dip the fillets into the dry batter mixture, ensuring the fillets are completely evenly coated in the flour mixture, tap off the excess and place on a plate. Heat a pan of oil to around 150 degrees. Open the dragon stout and pour a little into the batter mixture and whisk, keep adding the stout bit by bit until the required consistency is achieved, the batter should not be too thick or too thin. Dip the fillets into the batter and coat, allow the excess batter to drip off the fillet before gently lowering it into the hot oil. Cook for around 5-6 minutes turning them halfway through. Remove from the oil and allow to drain on kitchen paper. While the fish is draining, cut the bread buns in half and toast, once toasted add two slices of the cheese to the bottom half of the bun and melt under a hot grill.
    Time to assemble, add a generous amount of the sauce on top of the melted cheese bottom half of the bun, add the fillet on top then more sauce onto the top of the fillet the cover with the top half of the bread bun. Serve with fries or a side of choice, lick you’re lips and enjoy 😋😋
